Date night for hubby and I

Great date night cooking up a storm with my hubby and Chef Kat Mori. We made Pavlova for dessert, Lobster Thermidor and Caprese salad. A lot of it is done for you including the starch served with the lobster, and the béchamel sauce, otherwise you wouldn't eat till 8 pm. We learned how to cook the lobster, pipe the Pavlova, and prepare the salad. It was an enjoyable evening and something different for us. Everything tastes great. You also get the recipe for everything you make as well.

Lemon geniose cake

My friend bought the lemon genoise cake to a gathering so I had a chance to try a dessert from Sait culinary campus. The design of it was very nice. The lemon flavor was nice although the genoise sponge was very dry. I prefer my cakes to be moist. I may try other flavors but will pass on the lemon genoise next time.

They are first class and very professional…read more I first got introduced to their school when I went to listen to an evening presentation by THIERRY MERET -- CHEF DE CUISINE and MARNIE FUDGE -- PASTRY CHEF regarding their cooking classes overseas in France. This was pre covid and I still plan to go when they restart the overseas programs. At the presentation we sampled wine, appetizers and dessert. Beautifully pared and delicious. They made it so interesting and exciting I decided to take some of their classes in January, 2021. I signed up for 7 classes - Knife Skills, Cooking 101 (4 Classes), Stocks & Sauces and Made In France. My two favourite types of cooking are French and Asian. Needless to say I am very excited! Their in person classes are always small 10-12 people maximum so you get a lot of personal attention. Their cooking class area is so capturing the atmosphere of working in a professional cooking environment. They make it so educational, interesting, fun and motivational. Can't wait to get started! And if what I've seen at Cuisine et Chateau is held at any standard of quality and excellence, then the food scene of YYC is very much alive and well. Hidden away in Kensington deep in a building shared with a tanning salon and a cafe, the Cuisine et Chateau awaits all comers who want to learn beyond the normal menus. I have to admit, it's a nice cozy place that just exudes the charm of a parisian kitchen, complete with brick walls and clean steel. Chef Thierry Meret of Le P'tite Table and La Chaumiere holds court here with Pastry Chef Marnie Fudge. Combined, the two bring a well rounded excellence and education to the students, and I can see why. At this particular event I was attending, I was given a taste of an excellent quinoa salad with grilled shrimp, replete with lemon tones and flavours. Matched with the paired wines, the dish was simply refreshing, bright and well, yummy. Needless to say, I did enjoy it immensely. It's a great introduction to the food, and an especially good indicator. A particularly nice touch is how they've made the lessons specialized for the time, style, and interests. Want to learn how to develop knife skills? They got that. How about how to make a great french of italian dish in 40 min during your lunch break? There's that. Work had an event here for team building. Definitely is really fun compared to the traditional…read moredinner. So we were split into groups and we are each in charge of a dish or a course. So I did the Tom Yum Soup. Instructions were laid out in front of us. We had ingredients already or almost ready for us to start cooking. All we need to do is just to chop up the ingredients. We also had a theme. So we had the Vietnam dishes. I was in charge of making the Tom Yum Soup. It came out delicious. I really liked it. The other dishes were delicious too. Our instructor was Ching and she guided us in every step. Constantly watching how we cook. We had a great time. Everything went well. I also found out that every Friday they have couple's night cooking and Saturday they have classes for kids. At the end, I have to say it was fun. If you bring your own wine its cheaper but they have to pour the alcohol for you. Great team building event.

Got more than I was originally going for because they had other spices I had been looking for at their location. The store has a great collection of cookbooks, spices, kitchen equipment, specialty foods and equipment and lots to choose from from various nationalities. It is sometimes busy in there but line ups are generally not long. I inquired about French cooking classes and online ordering. They were kind enough to direct me to another spice supplier for items they did not carry which I appreciated very much. Definitely will be doing a lot more business with them,
