Our guide, Marina, had us taste a ton of fantastic meat stuffs here. For those who are adventurous, you will be rewarded with some of the most delicious morsels of food that you can find anywhere. It's interesting because the owner here, unlike in the US, will actually go out to the farms to select the cows that they want to use in the store and they will then sell meat from that cow over the next couple of weeks at their store. You can see their certifications hanging on the wall and on the ceiling to indicate that you're getting the best and the freshest. Here we tried the rillon/french pork belly as well as a pork sausage with garlic. We also happened to get a pate de campagne, pork ham with parsley, goose meat terrine and a rosette de lyon. By far my favorites were the pork belly and pork sausage. Really good stuff! Make sure to pick up some bread from the boulangerie down the street to then serve with the meat!

Wow--what a look of disgust I got from him! He reluctantly washed his hands and then proceeded to touch the rotisserie chicken! I caught him tossing scraps of fat, skin and bone in the bag! How horrible! The shop should be closed down!
