    I decided to give Lama's another try this season for crawfish. I hate to write a negative review,…read morebecause the workers are so very friendly and welcoming. The crawfish were seasoned very well, but they seemed undercooked. I have boiled crawfish all my life, so I know what the texture of the meat is supposed to be like when they are thoroughly cooked, and these also still had a hint of that raw fishy taste to them, which happens when they are not boiled long enough. Some people believe crawfish should be brought to a boil and immediately turned off to soak, but they are not safe to eat like this, nor do they taste as good. Crawfish should be boiled for 10 to 15 minutes after the water returns to a boil. I feel sure these were not. As I was about to post this review, I came across two online reviews on another site from 10 months ago for Lama's. One was from a woman who purchased boiled crawfish and shrimp there. Everyone in her family who ate them got terrible food poisoning. The woman was actually hospitalized with vibrio and salmonella. Another reviewer around that same time posted that he also got food poisoning from crawfish bought there. So, I decided to research and sure enough, you can get vibrio and salmonella from undercooked crawfish. Less importantly, there were many small crawfish mixed in this time, and there was an excess amount of water in the bag. They could fix this by simply draining the crawfish for a few minutes before they're dumped into the containers or put a hole in the bottom of the container, so water is not collected in every scoop. Last year, I bought boiled seafood there and had a similar experience. The crabs were undercooked and had no seasoning. I actually boiled them again at home to cook them thoroughly and give them some flavor. But who wants to buy boiled seafood and then have to boil it again at home? The crawfish were undercooked then as well. I would be patronizing this business frequently if they were boiling their seafood long enough, but for now I'm done. I will likely never return due to food safety concerns.
