The young woman at the counter let me know they're soft because of the ricotta. I ordered the three pancakes and only afterward noticed that you can order them individually. Three was definitely too many for me--I made it through two and was stuffed, so I left one lonely pancake behind. I also ordered a side of bacon to add some protein. They also have the cutest little French market inside, with a whole freezer full of items you can take home and bake yourself.
