This time, I didn't ask for my pizza to be cooked well done; I simply asked for it the way it was. Of course, that chef pulled the pie out just as it should be, with a light, crisp golden crust. As soon as you bend it with your fingers, you hear a slight crunch. The bottom of the pie didn't have too much flour, and I was still able to enjoy all the flavor notes. Just from looking at the pizza itself--the mozzarella, the way it was laid out--it screamed classic New York thin crust. Man, let me tell you, the pull on that cheese was amazing! I felt like I was right back in New York City, enjoying a slice in Central Park as I watched people play tennis. It was a short-lived thrill, but one that I would love to live again and again and again. The only thing is, next time I go, I hope the pie is consistent and tastes just the same.
