The cake was moist but with good structure and the fruit flavors were fresh and bright. We loved being able to customize our flavors and design. What a find! I had planned what I thought was the perfect weekend at Cavallo Point to celebrate my partner's birthday with her family and friends. Then we found Kirstin and Economy Pie and perfection got even better. Kirstin (who, like my partner Leslie, has a Swedish ancestry) was so excited to help us celebrate. She made 2 pies - one nectarine/plum and one coconut cream which was somehow gluten- and dairy-free (but we have no idea how) for our first night pizza party. The pies were out of this world - perfect crust on the fruit pie and not too sweet. The CC was to die for - I will move heaven and earth if I have to but as god is my witness, I will never eat another baker's coconut cream pie as long as I live. The next night was the show-stopper. Kirstin made her version of a Swedish Princess Cake - you'll have to taste it to believe it but the presentation itself was a crown jewel. The "crown" on the cake was a delicate sugar lace gold crown surrounding the most delicious cake and the best almond marzipan I've ever tasted. Kirstin was prompt in all her communications, she worked out the logistics effortlessly and the 2 dozen chocolate chip cookies I ordered "for the kids" kept us all happy right through weekend, including a hike through Muir Woods.
