We really wanted to do something very "West Coast" for our wedding and this was the perfect dish! Our tasting was INCREDIBLE, and perhaps our best surprise was the quality of the Vegetable Wellington they have as a vegetarian option. It is so delicious and in no way feels like a consolation prize. I was worried too many folks were going to want that over the tri-tip. James and his team are amazing! My husband and I got married on September 5, 2021 at Los Willows and Redtail Catering did all our food. We had plated meals with the filet and sea bass. Oh my gosh, they were SO delicious! The appetizers they made were incredible as well! We didn't want a big cake so James offered to make us a cutting cake for pictures. We aren't the biggest fans of cake but it tasted so good. James and his team also did our chocolate fountain desert table. We chose the Ultimate Chocolate Fountain which included 3 fountains: white chocolate, milk chocolate and dark chocolate. Prior to the wedding we had a food tasting that was a relaxed, fun experience during which we had a glass of wine and sampled 3 entrees and 4 appetizers. His whole team (I think there were 5 including chef James) were extremely professional and personable. They were all great but the empanadas were my favorite. For the main event we decided to go with the Asian salad (the dressing is to die for) and the Green salad with a champagne vinaigrette. Mashed potatoes, roasted veggies, Chicken Piccata (The chicken was so tender!!!!) and Tri Tip with au jus and horseradish sauce with a choice of rolls and butter. Everything was super tasty (we had a lot of compliments on the food) They then helped with the champagne passing, cake plating and passing and clean up. We went with a breakfast style dinner with waffles, eggs, bacon, sausages as well as fruit and danishes. We did a tasting a year ago and the food was just as good as from the tasting. Redtail went above and beyond in helping us plan our wedding from the bartender to having chefs make waffles So incredible and they worked patiently with us over the many changes over the planning process and Covid. However, I did notice they were a little disorganized in communication and we did run out of bacon, sausages potatoes and eggs so the last table had none. Maybe make tons of extra next time? I just attended a workshop in San Diego yesterday, 8/1/2022. Red Tail catered the lunch. Simple lunch spread but very good assortment, ample quantifies, and very good quality. Potato salad tasted as good as our family makes for the family. Deli meats, well the sliced beef was as good as I have ever had.
