Also known as Quesos Cortés. We came for the cheese but were also looking forward to some olive oil. They were locking up when we arrived just before 2pm. A young woman greeted us and was nice enough to let us still get a tasting. When we went in, it was the actual production floor where the milk is pasteurized and the cheese is formed. We tried their Queso Fresco in natural, chipotle, and jalapeño flavors. These were only a few days old. As it ages, it becomes Queso Oreado or "aired cheese" because the wheels are flipped every day due to moisture content and settling. The one we tried was 2 months old and they didn't have anything older. This is a small operation so supply is skimpy. We learned that their cows are of the Jersey and Holstein breeds which supposedly provide milk with a richer fat content and thereby improving creaminess as it ages. She explained that they give tours as early as 7am that can include the entire process from milking the cows to forming the cheese. They still make olive oil but they were all out. As we were leaving, we met her father, the owner, and other members of the family. They were incredibly nice. Of course, our conversation was in Spanish and I'm assuming they're English limited. This was our first stop of the day and immediately went to Tienda de Quesos y Vinos Los Globos in San Antonio de las Minas about 10 minutes away on Highway 3. Los Globos had Queso Fresco and Queso Oreado up to a year old from well known local cheese maker, Ramonetti. As it turns out, Queso Oreado aged 2 to 3 months is my sweet spot. That said, I found the flavor and texture of Quesos Cortés comparable to Ramonetti. This may be blasphemy but I liked it and it was much less expensive. We purchased about 500g. of Cortés and about a kilo of the Ramonetti. Most of the Ramonetti was gifted and I kept the Cortés for myself.
