The tonkatsu ramen is definitely not authentic Japanese flavor, but more nutty and less heavy feeling which was great. The food presentation is awesome and everything tasted fresh and clean. So blessed to finally have real ramen in Ukiah! I've been to a lot of ramen spots throughout the Bay Area, and RamenCubed is two thumbs way up!! The broth is rich and flavorful, the noodles have that perfect bite, and you can watch the chefs make your bowl of yum! The whole process feels nourishing. The owner is lovely -kind and welcoming -and the space has gorgeous wood tables and décor and also a new cozy sitting area - just the right atmosphere for slurping happily. I would have never guessed that the best ramen I've ever had would be in a small, tucked-away town up north. I ordered the miso chicken ramen, and my fiancé got the filet mignon bowl--both were incredible. The broth was deep, savory, and perfectly balanced, and the noodles had the perfect texture. The noodles are made in-house using heirloom wheat from the Mendocino Grain Project, all locally produced in Ukiah. He even crushes his own turmeric--you can taste that level of mastery in every bite. The space feels relaxed and sophisticated, with a creative edge that complements the artistry of the food. However upon further inspection, the noodles, while cooked fairly nicely, were sitting in the bottom of a soup cup totally dry, stuck together and to the container. Oof, not good noodles from a noodle shop, hmmm...Seems like to-go isn't a good idea. If they had added just a touch of broth to the noodles, it would have been much better. My wife and I had dinner at Ramen Cubed on s rainy Monday night in November. Danny was our cook, server and cashier and was gracious, helpful and pleasantly restrained. The food was as if kissed by the Gods; creamy broth, unctuous flavors and generous servings. I had the Tokotsu Ramen, silky pork belly with whole grain Mendocino Grain Project noodles, seaweed, corn kernels and edamame. We went in based on the many positive reviews, despite not being particularly hungry. Of course we wanted to taste the food, but we were also curious about the service and overall experience. Our chef, hostess, and server, V, was so amazing. She recommended the tonkotsu ramen and even split the serving so my wife and I could share a bowl. Holy moly was it delicious! And so much food. Even sharing, we had to take the remainder to go. V was clearly devoted to the food and providing guidance and hospitality and we thank her for that. The seating is somewhat limited and its popularity may mean you sit at the counter, but we did and it not only did not pose a problem, but it was fun to have a front row seat to V cooking. It was a little jarring to be in a Japanese style restaurant while having country music piped in from the indoor speakers, but it was just amusing, not a problem at all.
