When I asked that plumber if it could be fixed and put back the way it was, he said no. I realized later he just didn't want to fix his mistake. I had to call around for another plumber and got Nathan with Flourish Home Services. I wasn't feeling good about having to call another plumber but it was something about the conversation with Nathan that made me decide to go with him. Nathan came out immediately and assessed the situation and stated it could be fixed. Nathan came back two days later with what he needed to fix the waterline and put it back to its original state.
