An abundance of gluten and dairy free options (they even have a separate fryer for gluten that doesn't allow shellfish) for folks. We had the new market caviar, chimi chimi steak (), and the sizzled sesame stix- and honestly, will be dreaming of all of that. Always a nice combination. We were quickly seated and told about some of the specials before the waitress even came. She knew all of the specials and the way the foods were cooked, which was so helpful because some of them I had never heard of. And there were such a selection to choose from it was a hard choice to choose just one thing. If I've been with more people, we would have got more dishes and shared. Food- I had an amazing lemon drop. It was like iced liquid candy in a glass. My friend & I got the chicken dumpling pot pie, which was so savory it melted in our mouths. But next time I will definitely start with dessert. We had the chocolate mousse pie, and it was to die for. A shortbread like crumb crust with Rich chocolate smooth, mousse and whipped cream. Sounds simple, but honestly if I had been home by myself or alone in the restaurant, I would've licked the plate. Definitely order two. A friend and I stopped in on a rainy Sunday and sat at the bar. The food and service were both excellent. They provide beautiful interpretations on food you don't typically see on menus in Wilton manors. The staff was all very friendly and the atmosphere was beautiful. Great job. What a beautiful transformation from the previous restaurant at this site! The dark, modern and sophisticated vibe is a welcome addition to The Drive. The cocktail bar plus elevated small plate food fare concept is pretty unique for the gayborhood. I can think of only one other place that comes close. Hopefully people will find Proof even after dinner since the craft cocktails are excellent. The Balanced Bloom was definitely balanced; delicious gin-based and not too sweet. The bar even has craft mocktails for teetotalers. Except for the prices, I am still not sure of the difference between Small Plates and My Sized Plates. Both are well curated along with cute names, and good menu descriptions. Both are small sized servings. Dumplin' Pot Pie was not as thick and creamy as I thought it would be. It was more like soup than stew. But it was beautiful, delicious and tasty! Bone to Pick roasted bone marrow was excellent. Scott M liked his 2 Mini Mac Sliders. His Truffle Sticks came out cold and soggy; the fries were quickly replaced but still soggy for some reason, and the manager took it off the bill. Service truly shines here. The gracious hostess worked hard to get us the right table. Kudos because it was opening week and the place was slammed; however we were one of just 2 parties with reservations and no table reserved inside for us. We were finally seated on a sidewalk table before we requested to be moved inside. Hopefully they adjust to prioritize parties who made reservations vs walk-ins. The owner enthusiastically greeted us. The FOH manager was so personable to me as we talked in the rear of the restaurant. Our server was super friendly and helpful with the menu, and of course she remembered us from The West End. Even with her busy kitchen, Chef Marcy came out and chatted with us a few times. It was date night and I made reservations to try Proof with my partner. It was busy with everyone wanting to try the new venue on Wilton Drive. We were seated promptly. My partner ordered the mini Mac burgers. Two sliders came with the buns branded with "Proof". Nice touch! My partner said he wished there were 3 burgers. Not much to share. He said they were average and nothing special. I ordered the Cauliflower Mosaic. It arrived ten minutes after the sliders. Bad timing! The cauliflower was roasted and sat on a bed of curry flavored hummus. Truthfully, I was disappointed in the dish. It had so much potential! For one thing, the portion was very small. It should be three times larger or they need to list it on the small plates side of the menu. It comes on an appetizer plate. This is not an entree. The temperature was luke warm and the flavors need more spice. Very sad. We shared a Cesar salad. It was good but not "huge". Barely enough for two. We could have used a serving spoon to divide it up. We each had a glass of wine. The pour was fine. Our take on Proof- after $80, we both left hungry. This is not a place to go if you are hungry. The portions are small. The food timing is bad too. We can't even say the food was amazing. It was just okay. I recommend eating next door at the Greek place. Better experience for sure! read more

Proof has done an amazing job updating the previous "old school" (and I mean really old school) restaurant. The decor is beautiful and picture worthy. This is a tapas style restaurant. It offers some unique twists like "southern caviar" aka boiled peanuts. Also, is their take on chicken pot pies and skirt steak. I was disappointed with my Manhattan style cocktail - and cocktails are all important in Wilton Manors. Nonetheless this is a nice addition bringing new life to the spot. read more

We always try to search out the best restaurants in South Florida and many times we go with Jet Blue dining recommendations. The Proof Restaurant at 2045 Wilton Drive in Wilton Manors was next on our list. We arrived at 6 PM (recommend reservations) and were immediately seated. Our server "Max" was amazing and we went with all of his recommendations. It's basically a tapa restaurant but they have full entrees as well & amazing drinks from their full bar. We ordered everything for our table of 6. Shrimp cocktails, caesar salads (2 were enough for 6), crispy flashed fried green beans in chili sauce, spin & kick artichoke dip with jalapeños & green chili w/wonton chips, roasted cauliflower w/red pepper hummus, chef's charcuterie board, Burrata salad w/tomatoes, pesto, truffle honey & fig glaze. The entrees included after all of the small plates, coffee lavender crusted lamb chops, mini burger sliders w/Mac sauce and cheese, Dumplings chicken pot pie (rave reviews). With all this food, "Max" recommended the bread pudding & a chocolate soufflé w/bourbon sauce for dessert (incredible). They pretty much had to carry us out after dinner. I like the way the chef works here, she visited our table, nothing pretentious, just lots of fun and straight forward good work. Service was just as good with friendly and helpful all wrapped up in one. I had Matthew as my server but it looks like the whole staff really enjoys what they are doing. Creative flavours that will leave you happy and a drink menu that backs it up. Desserts ranged from ok to very interesting (I didn't have one but the bread pudding sounded great) Prices are reasonable. One of my fave chefs in South Florida, opened her newest venture, Proof on "the Drive" in Wilton Manors. So of course the second we hit FLL, we made a beeline to the restaurant. To only be open a month, they are extremely busy. Snagged 2 seats at the bar, 8pm last Saturday night. What I like about Proof it's small to mid size plates concept, which is perfect when you don't want a lot, but are feeling different things. We stayed on the "feeling fancy" side of things, starting off with both the escargot and the escargNO, which is the vegetarian version. Both are phenomenal, get the real version without the puff pastry. Moving on to the chimichurri steak, it was cooked perfectly. I had to order the New Money because who doesn't love caviar! I was definitely excited to see Markys Caviar as the caviar of choice, it was a phenomenal presentation, and a great end to the night. Run, don't walk to Proof and have a damn good time. read more

Chef Nate is missed in the old Chef Nate's. This is not Chef Nate's. This place is a good bar. The drinks were good. They were $15-$20 for mixed drinks. The meals - and presentation did not match. We were there for brunch the waiter went through the whole presentation how it was a tapas place and the food would come out as ready. We were the first people there and they served my egg and cheese sandwich on a croissant - heat lamp warm and completely dry. It had obviously been sitting under a heat lamp, as the cheese was hard, the egg was solid and my friend's Eggs Benedict came out hot so we know what happened there. I would not go back. The Alibi has far superior breakfast food if not the old Chef Nate's' space. Two egg sandwiches (one heat lamp warm and dry) and two drinks $75 plus tip. read more

We just tried PROOF for the first time, and honestly...we're still talking about it. This was hands down one of the best meals we've ever had in Fort Lauderdale. From the second we walked in, everyone was so friendly and welcoming. The service felt genuine--not over the top--just really attentive and helpful. You can tell they care. We started with the Mini Macs and they were unreal. The burgers were perfectly cooked, loaded with flavor, and served on these soft brioche buns stamped with their logo. They're held together with these little gold ball picks, which sounds like a small detail, but it honestly made it feel kind of fancy and fun at the same time. Like a dressed-up comfort food moment. The chimi chimi steak was incredible--super tender with crispy potatoes and a fresh chimichurri that just pulled everything together. We also tried the curry cauliflower and were not expecting to love it as much as we did. The heat was perfect--not too much, just enough--and it even had a little edible gold on top which made it feel extra special. The dumplin' pot pie was such a surprise in the best way. Under that flaky crust was this rich, creamy broth with the softest, pillowy gnocchi. Total comfort food but somehow elevated. And the truffle fries...we couldn't stop eating them. We had four cocktails (which is not typical for us, but we couldn't help it)--the matcha tini, bacon bourbon old fashioned, cut and burn, and blossom--and every single one was amazing. Super creative but still really balanced. Dessert completely sealed it. The silk pie was rich, chocolatey, and so smooth with fresh whipped cream on top. And the smoreos...just wow. Warm, fried, gooey, and everything you want in a dessert like that. What's really impressive is that this place has only been open about four months. The owners, Dave and David, have clearly created something special here. You can feel the attention to detail in everything, and the chef knows exactly what they're doing--every dish just hits.
