I'm so grateful that the Proof team was open for Easter to serve such wonderful treats! I picked up some of my favorites: a jalapeño cheddar loaf and baguettes. Additionally I was tempted by the carrot cake croissants, Paska, and hot cross buns. The star of the show was the Paska, which was as beautiful in person as online. The texture was delicate with a light chew, and dotted with candied orange and cranberry! To put it lightly the Paska was promptly inhaled! I hope Paska becomes an Easter tradition at Proof. My only regret is that I didn't buy a second Paska. The croissants were excellent and reminded me of a spiced donut. Buttery, with a light glaze of sugar and carrot. The hot cross buns were excellent warmed up served with a generous amount of butter!

Lemon tart, morning bun and rosemary twist

Walked in this morning right at 7am. Was greeted by very friendly ladies. Was able to test few types of bread. YUMMY. Great flavors, fresh and delicious. Got few goodies to try. Lemon tart 10 out of 10. Full of flavor and right amount of tartness. Rosemary twist 10 out of 10. Size, flavor top notch. Morning bun 10 out of 10. Just right amount of everything. Cranberry walnut bread was my choice for today yes and yes with a warm piece of Brie cheese amazing addition for any charcuterie board.

I had read some of the reviews prior to coming here and there were a lot of complaints about prices. People who complain about the sourdough prices here have never made sourdough, and have no clue how much QUALITY ingredients cost. I was just in Miami trying out all the French bakeries and the pain au chocolat (chocolate croissant) HERE is cheaper/healthier and SOOOOO authentic! They literally grow their own grains! Start to finish! You guys did an incredible job and I'm so happy I found this place because it's hard to find nice places on the west side. I will DEFINITELY be back and recommend this place! Ashlyn and Stacie were AMAZING! Stacie made me an incredible dirty chai and per my many reviews of coffee I'm a very picky chai connoisseur. TRY THIS PLACE OUT BECAUSE IT IS WELL WORTH IT!

Can't say enough about this bakery. Proof has the best sourdough in the Valley, and such a unique variety of offerings. This is my first time at the Litchfield location, I was in the area, and too far from the farmers market, so I ordered my sourdough online and picked it up in store. They always have tempting pastries in their case and some yummy local provisions as well, like honey and olive oil. The staff is always friendly and welcoming. I usually go to the original Mesa location. But this one did the trick today! I grabbed a baguette and a loaf of their sliced multigrain. I like to order online, because they sell out fast no matter the location. They also have pizza as well. Check them out!

Khorasan bread - num!!

Originally found Proof at a farmer's market and my husband and I were so impressed with the croissant and bread we purchased that we HAD to find where they were located - what an INCREDIBLE surprise when we discovered they are in the West Valley!! Cannot say enough good things about this bakery - the love and flavor that is baked in is beyond compare. The Khorasan bread makes probably the best piece of toast I've ever had (and I've had toast all over the world... lol) If the taste and texture weren't enough - It has just 5 ingredients! These bread makers know what they're doing and have become our "go to" for bread and croissants. So happy to have you in the West Valley!! P.S. for a nice splurge, the morning bun is my favorite

Proof Artisan Bread, where carbs are a religion and I am a devout follower. That Pain Au Chocolat though, it's the holy grail of pastries. And, don't even get me started on their cheddar jalapeno sourdough, it's the epitome of perfection. Oh, and their vanilla latte? Heaven in a cup. While they do sell some coffee options are limited. Do not come with expectations this is a coffee shop in any way. The MVP is the bread here. If you come hungry they have a great lunch option of their sourdough pizza, a drink and a chocolate cookie...which by the way is amazing! I do recommend taking it to go as there is very limited seating. Service was great, vibrant chill, but parking can be a bit rough depending on time of day.

GREEN OLIVE BOULE - Flour, Water, Salt, Harriet Queen Creek Olives

I have found my new favorite bakery! This shop in the West Valley of the Phoenix area also has a full café that I completely ignored on my first trip here, because I was so excited about the bread and pastries that are made with locally grown Rouge de Bordeaux wheat milled in-house at their Shea location. The ingredients here are so clean and so high-quality. Everything has the sourdough base. All ingredients are listed underneath each item. The bread is made with flour, water, Harriet & salt. For the Green Olive Boule set out for sampling on Sunday, they add the local Queen Creek green olives. I sampled this loaf and was amazed at the green olive aroma coming off of the samples. I loved the taste of the fresh sourdough, and could easily taste the green olives as well. It was a subtle sour and salty flavor. I immediately grabbed a loaf to take home. My daughter raved about how delicious her fruit pastry was and wanted to know where this bakery was so that she could go back. Luckily, they are close to home and work for her in Litchfield Park. The chocolate chip cookies are one of the best I've ever tried. They taste and smell home baked and are nice and big & thick. They are crispy on the outside but chewy in the middle. There are also pizzas available here made on the sourdough focaccia bread. These pizzas look so good and I really would love to come in for the lunch special one of these days. Every day lunch special includes: a slice of sourdough pizza, your choice of soda, milk, or water & classic chocolate chip cookie for $12. The service here is so friendly and helpful. I asked about eggs being in the pastries due to my egg yolk allergy and they were happy to discuss ingredients and options. I ordered five pastries and they let me know that if I got six pastries, I got a discount. I jumped all over that and ordered the fruit tart. I was really so impressed that we have such a high-quality bakery that puts a lot of time, love and attention into the quality of ingredients as well as the outcome and presentation so close to us here in the West valley.

This is my fave bakery to get iced lavender latte coffee and an almond croissant. A good pair to start the morning. The croissant is soft, sweet and has a perfect crunch with the almond toppings. The iced coffee is bold, strong, and I like the hint of lavender. Inside the bakery is small and has limited seating area. They have different types of artisan bread and they are able to sliced it inside the premises.

Freshly baked bread

Came back to try their pizza and just as expected, was super delicious. Was told that it's made with their ciabatta starter, which gives it a fluffy texture. I have now converted my friend into coming every week for her sourdough bread fix.

What a local gem! Everything here is incredibly fresh and delicious. The coffee was fantastic, and the focaccia pizza was wonderfully spongy and full of flavor. And the country sourdough loaf, absolutely outstanding. There's nothing better than a beautifully baked, home-style loaf, and this one did not disappoint.

This charming bakery offers a delightful array of freshly baked goods, including a variety of artisan bread and delectable pastries. Standout items include the Roman pizza and the irresistible sourdough and almond croissants. Don't miss out on trying their Dirty Chai, a unique and flavorful beverage that combines chai with a shot of espresso for a delightful twist. I like getting it iced and if you have other dairy preferences they can customize your drink. This bakery is a haven for those seeking high-quality, artisanal treats in a small cozy setting. There are only two tables so it's not a place to bring a party but to sip some morning brew and have some delightful pastries to yourself. Whether you're looking for a quick snack or to stock up on bread, this bakery is sure to leave you satisfied and eager for a return visit.

Cute little bakery! They have a great lunch special, a slice of pizza, soda and a cookie for $12! The pizza slice is very generous and the chocolate chip cookie was delicious!

It happened to be a little under twenty minutes away from us so we decided let's do it & they were open late. Hell yeah. There's not a crazy amount of pastries but the selection was great. We got two tiramisus, one vanilla custard lobster tail, some mini cannolis, & the wedding cookies. Everything came out to about $50 so beware, prices aren't exactly cheap. But for one, if you're going to do "bad" then do it right & we also shared with our family of 5 so plenty to go around. & Holy cow, everything was incredible. So indulgent, decadent & rich in flavor. My nephews liked the cannolis, personally they're not my favorite, but if you're into it the mini's are a great option to quench the craving. The lobster tail with the vanilla custard took me by surprise. I didn't think I was going to care for it, but the cold custard was refreshing & the flakiness of the bread was crazy, my taster buds were confused by the textures, but in the best way. They complemented each other well. My ultimate favorite was the tiramisu & the wedding cookies. I honestly wish I had gotten more of the wedding cookies, those things took me back. I grew up eating the Mexican ones & the Italians did it right *applause* But damn, the tiramisu was to die for. I would order that again & again. Perfectly chilled, the dusting of the cocoa powder didn't taste like nesquik--incredible. At first the price had me thinking if we were doing too much, like damn, should we have just gone to Sprouts bakery? But after being able to indulge in a great quality dessert, it was worth every dollar. My only feedback, careful when you're paying at the register. If you're not paying attention, the tip automatically defaults to 18% on the tablet. Only thing I didn't care for. I could see if I was eating at the restaurant, but I just popped in to take pastries to go. So, that was kind of annoying. The service was fine, the girl that helped me was nice, but again I just pointed at desserts I wanted & went home. The location is part of the main restaurant, but it has its own entrance & little room making it feel separate to the Sicilian Butcher. They also carry gelato which I haven't tried yet. I believe they have little tables to sit at also. Highly recommend checking this out so save room for dessert!

Hard and flakey on the outside was soft on the inside and then it had vanilla cream or you had a choice of Nutella. I'm really glad I do not live anywhere near this restaurant. Otherwise I'd be there every other day, getting one of these, they were so good. They had gelato and an original cannoli among with so many other desserts! You got to pick your shell and filling for the cannoli. My MIL said their gelato tastes like it did when she traveled to Italy. All of the desserts looked AMAZING. We went there with my MIL for Christmas Eve dinner. My dish for dinner was ok but I should have got the lasagna as it was a smaller portion than what everyone else got.

There was brownies, cake pops, chocolate covered pretzels, rice crispy treats, pretty much something for everyone. I knew I had to get a few cupcakes for family and the kids so we got 8 cupcakes which was $24 plus tax which came to $26 and change. We got vanilla, salted Carmel and cookie butter which we all shared and I didn't get a picture of. It was probably our favorite, then salted Carmel then vanilla. There was actual cookie butter mixed in and in the center. It was delicious and we haven't come across a cookie butter cupcake before which was cool to see a new flavor. The second favorite was salted Carmel. You tasted the salt and the sweet Carmel center and was delicious as well. The cupcakes were more dense than I like but the flavor was there. The vanilla which I got for the kids and parents was personally my least favorite. I could taste the flour or baking soda in it and it was dense like the others. I normally don't go with plain anything anyway but the kids seemed to enjoy it. Overall, there was a lot of variety and something for everyone. Love trying out new places and glad we were able to try Lizzy's treats!
