Zeph and his wife Emily and his team are warm, inviting, knowledgeable and top notch. I have attended a butchery class and bought meat from them (not to mention a butchers burger) all of which are incredible. Support the local and Proletariat.

First time here. The line looked a little daunting but it moved reasonably fast. Mellow crowd and most were sipping beer or wine and chatting with others waiting. Prices on beer or wine I thought were reasonable. Sausage samples were fun and tasty. Zeph is quite properly proud of his sausages and hamburgers and seems to enjoy interacting with his customers. The burgers! Wow! First bite really was 'mind blowing' to use an old overworked phrase. I like, if not love, hamburgers of all sorts of variations (okay...I am not into those six plus inches of all sorts of stuff stacked on a bun...if you have to unhinge your jaw to try and fail to take a bite...not sure that is a real 'hamburger'...?) but Zeph and his crew (Asscher?) have made the meat...the basic component of a good hamburger...the center point...the star of the show AS IT SHOULD BE!! Maybe it is kind of deconstructing the hamburger and then building it back up, making a basic but elegant and very tasty hamburger. It needs nothing! The components are simple (kind of...the meat is complex in taste) and they work together so the sum really is greater than the parts. I am an old guy (72) and I've had a lot of hamburgers (and I make a pretty good one myself) but this is something else. Sometimes you are fortunate enough to experience a food that you have been having for years but then you get to enjoy how it has somehow it has been reduced to basics but in a way that the result is simple but elegant and reminds you of why you love a particular food (like the food stalls in SE Asia...they make one or two items but they are fantastic). The first bite was fantastic...simply fantastic. I didn't say a word to Bimbi, my wife, because I wanted to hear her response from her first bite with no chance of a comment from me to influence her feelings. Bims loved it!!! This really was transcendental...a rush of the senses reaching back in memory of burgers past to remind one why you have loved a food for years and show you just how fantastic that a hamburger can be when it is made with care while using simple, kind of basic ingredients but of superlative quality. This seems to be in my opinion certainly the best hamburger of this style certainly in Portland, maybe Oregon...I'd love to try one that might be better but I'm not at all sure I will be so fortunate to ever experience a better hamburger than this one. I know I've already marked my calendar for next month!

I really like the community vibe of this place. Will be taking one of their classes at some point. The burgers at their Friday event are... 6/10? They should at least toast the buns. It's a very 'friends and family' feeling place and I look forward to trying the sausages.

Prosciutto Making: Zeph Shepard is just the right kind of instructor. Affable and engaging, his depth of knowledge in all facets of butchery and the curing of meat make it possible to understand the steps of preparing your pig leg. This class is very hands-on with a break for salad and a sausage sandwich that was simple and delicious. You will head home with a pig leg that is well on it's way to becoming a prosciutto. Zeph will surpass your expectations. A charcutier right here in Portland!

Odd, as we were not in festive dress, but it was my partners birthday! He was cutting some amazing ribeye, and that's what we were looking for--he said he got us, and wow. Take a look at those steaks! Selection is good! But, a small place can't be expected to have 100s of items, but everything is carefully chosen and fresh. I'll be back for those oxtails for sure! Also, there was a very wonderful lady there with her fresh baked goods, not sure if that's a regular thing or or a pop up, but shout out to the strawberry pound cake. This is now going to be our regular spot for great meats! As far as price goes, I would say competitive with Gartner's and even some groceries, but this place is special, so you get what you pay for. Oh, and there's a big parking lot in the back, which is great on the busy street.

It's like asking for a grape and you give me an apple...so either you cut it the right way or just call it something else like scraps.

It is as though you take a step back in time, where customer service mattered and you have a butcher who cares. It doesn't matter if you get a greenhorn meat cutter or the Owner you treated the exact same with respect. They still use the take a number from the roll method. It doesn't matter the day, it doesn't matter how busy they are you are always treated like the only person in the market. Their breakfast sausage loose or in links is fantastic. I haven't found a better flavored sausage anywhere. Any of their smoked meats are to write home about. We like their soaked beef short ribs. Have your grill HOT and be ready to grill with those ribs. Their habanero BBQ sauce is delicious spicy good. If It's meats you want! it is meats Gartners delivers. I could go through each item in the cases from the ham to the brisket and tell you why each thing is better than the next!! I recently started vising a meat store by my work. I got some sausages. When I got home there was a pube in the package. In 30+ years of getting my meat at gartners I've never had anything extra wrapped with my meat. The information about the different ranches and farms is in their website and on signs in the store. They are also happy to talk with you about them. The store is charming and welcoming. Be aware that parking is tricky. There's a bus stop directly in front of the store and there's only one spot in their parking lat and it's only for vehicles needing wheelchair accessibly. The only place to park in front is on the curb just before the store.

They both didn't last 24 hours they were so good! Great selection of meat including pre marinated skewers, brats, dogs, etc.. to supply your BBQ and or your freezer. They also have a huge selection of rubs and sauces for that meat! I will definitely be coming back and would recommend you pay them a visit as well. So awesome to have a quality butcher so close to home!
