DO NOT USE PRO EDGE SHARPENING FOR YOUR EXPENSIVE CUTLERY!
My sons and I have often used Pro Edge Sharpening to sharpen our knives and tools. Our knives are not inexpensive and include Shun, Wustof and Henkels knives, some of which retail at over $200. Recently, my eldest son and his wife, who are both culinary professionals, had 8 of their knives sharpened by Pro Edge at the Baltimore Farmers' Market. The results were disastrous.
Rather than perfecting the edge by beveling both sides of the blades, Pro Edge beveled only one side of the blades into a "chisel" point which is not suitable for kitchen work and in the process removed quite a bit of the blade. In order to correct this, my son and his wife will need to have the blades re-sharpened which will remove more metal from the blade.
Pro Edge was notified of their poor craftmanship and has not made any effort to refund the cost of their poor work nor respond to our communication. read more
