This was so delicious! What a great experience for my friends bachelorette party. I was looking on Yelp for a paella chef to come to our AirBnB in Palm Springs and found Chef William. It was easy to email, setup what we wanted, and book. Chef was on time, very professional, and made a delicious and impressive meal. Chef and his CDC were great. They came in, assembled the gas grill paella setup (indoors and it worked great, not smokey). His assistant offered to make us all a cocktail with ingredients we had on hand which was really nice. The appetizers were unique and full of flavor. It was difficult to select a favorite as they were all delicious. William described each one prior to passing the tray. The salad was beautifully plated with a delicate crispy cheese on top and sprinkled with flower petals. The paella was spectacular and cooked to perfection. He initially served 4 appetizers while we were finishing up a movie sitting in the living room: Ahi tuna: this tasted fresh and not "fishy". The sauces complimented the tuna well. The bite-size was perfect as an appetizer while taste of flavors Steak bites: this was also a perfect size for an appetizer. Ours was modified and tasted a bit like Stroganoff with tender beef. Duck Crostini: this had a flavorful aioli that complimented the duck and the crunchiness of the crostini. The duck flavor was not strong but this small appetizer was flavorful considering its size. Pork belly: this was our absolute favorite. The pork belly was bigger than the other appetizers and full of flavor. The pork belly was so tender and paired well with the slaw. For dinner we enjoyed: Bread with butter, salad with parm crisp and seafood paella. The seafood paella is the best paella and best seafood I've ever had...all in the comfort of our rental home. The octopus was incredibly tender and melted in my mouth. I am used to overcooked rubber, so this was an incredible surprise. I doubt I'll have octopus like that ever again. The chorizo was Smokey and flavorful without being spicy. The lobster was also incredibly tender and fresh. I was expecting rubbery because it can be easy to do but this was not the case. Because there was so much tender seafood, the crunchy rice complimented the dish very well. I had to have seconds of the rice because of how tasty it was. For dessert, Chef Bloomhuff was able to incorporate lemon since it was the birthday girl's favorite flavor. He did not disappoint! The mini cakes with blueberries were fantastic. There was not an overwhelming taste of lemon or sweetness which was perfect. Both Chef and Theresa were really friendly and great to have as company. They made sure presentation was on point and that the place was as clean as before they arrived. I highly recommend for a special occasion or for a private chef at home. Chef Williams and Shane were a dream! They were both professional, lovely, engaging and the food was superb. The menu was delightful and presentation of all the food made our mouths water. I loved the description of each dish complete with special callouts "from my garden", "fresh from the farmer's market", etc. These callouts made each dish and the effort that went into everything so much more special. It was all made better because Chef's assistant was also a bartender. There are as many private chefs in the Coachella Valley as cacti, it seems. But there's only one Chef Bloomhuff. We hired him based on his strong Yelp reviews, and are super-glad we did. He made dinner for eight of us at our home in Palm Desert, and the results were so satisfying, I almost don't know where to start. First, the appetizers were not only super-tasty, they were ARTFULLY arranged on the serving dish; so pretty, we almost felt bad about eating them and disrupting the display. (See pictures in this review.) Second, we loved that Chef Bloomhuff personally introduced each appetizer, salad, entrée and desert... then discussed it in detail. I'm not a chef, but I love food and it was fascinating to learn the culinary story of each dish. Third, we loved his inventiveness. Example: the wedge salad was not cut like a traditional wedge; it was horizontal slice, which we've never seen. Tasty and interesting! (See pictures.) Fourth, we loved that the portions were substantial. Not huge, not inappropriately large, but certainly substantial. The steak was a very generous portion, wedge salad well-sized, grilled onion big and juicy. Too many times, private chefs dole out tiny portions and one is left feeling hungry and, to be honest, a bit taken advantage of. Fifth, we loved that Chef and his staff came in crisp, clean uniforms featuring long French aprons; it didn't make the food taste better, but presentation is part of every dining experience, and it sure ramped that up. Sixth, loved his professionalism, engagement and dedication. Example: well before our party, he came to our home to do a "site visit," personally checking our range, oven and kitchen, so there wouldn't be any surprises when he came to perform his magic a few weeks later. Who does that? Run, don't walk, to hire this dedicated, inventive chef and his pleasant, professional staff. P.S. Before the seafood paella was served, we were served bread with butter and a salad with a parmesan crisp on top. The seafood in the paella was delicious, and all the seafood in the paella was cooked to perfection. Everyone at our table talked about how super tender the octopus was. Anything seafood overcooked becomes rubber and inedible. Dessert: Blood Orange Campari Cake/Fresh Made Ice Cream We devoured that without enjoying every taste. Overall everything was delicious, presentation was beautiful and great service. Chef William and Shane cleaned everything up and put all the dirty dishes in the dishwasher. There were 8 of us, 2 of which were vegan and they were told the "chef" would "throw something together" for them. He was very unprepared, scattered brained, and relatively rude. The chef told his assistant less talking more working when he was chatting with us and washing dishes!! I felt as if the chef forgot about our dinner and went to the local grocery store that day. I am giving 2 stars for paella it was the only thing that was semi flavorful, but I was shocked half the things he brought were already pre made and he even had chicken stock from Whole Foods (don't chefs make their own?).
