It is located below ground level under a residential apartment building. Very small restaurant with twelve tables constructed of light pine wood. The staff (woman at the counter), was friendly and helpful when I asked about the differences in the wafels, her recommendations, and what some of the other baked goods were. I was very curious about the gember køek and she said that was her favorite in the store. So I got: - honingwafel €3.60: as mentioned above crispy cookies with a honey syrup center. I'm kinda curious what this consisted of since it tasted less sweet than only honey itself. Level of sweetness is probably 6 or 7 out of 10. I ate it by itself and thought it would go well with some coffee or tea. As you're eating a little of the syrup may be squeezed out of the sandwich at the edges so take care. As they sold more, I saw fresh cookies being prepared on the side. - gember køek €3.20: as a ginger lover, I couldn't say no to this one; it's an almond cookie covered on top with chunks of candied ginger. A softer crumb, the ginger pieces were very sweet, cloyingly so that after eating about half (on a separate day than the wafel) I wish I had a cup of black coffee in the moment. - speculaasbrokken €5.50: crispy speculos cookies (think those bischoff ones they serve on Delta flights also widely available in US grocery stores now), but house-made and with almond slivers on top. This was definitely enough to share between two people if you're not used to large breakfasts, but apparently this is typically only for one. The croissant was fresh and flaky and the other breads were good too but nothing to spectacular. The jams however, were great - I really loved the raspberry one but the lemon was good too. For me, they were some kind of strange thin crispy cracker with a layer of caramel. Nothing great. So when I saw this "freshly made" stroopwaffle store I had to stop in and see if I was really missing something. Yes, yes I was. These are downright delicious. They make them on the spot and you get it warm with the center slightly gooey. It's nothing short of amazing. I ate mine and most of another one my friend didn't want to finish (not that she didn't love it - she's trying to stay away from sugar). It's a good thing I don't live in Amsterdam as I would want to stop here all the time. I apologized to my Dutch friend and shared that I was a convert. He heartily agrees fresh made are best. They didn't have the variety available, so I went with a plain stroopwafel that came in a musical tin. Wow! That was a fun and unexpected touch.
