I want places that are frosty cool like a Nitro shot of Grey Goose not fever hot like an Armagnac. Forget Amnesia :), Dc10, Es Paradis and the rest. Essential Ibiza for me is Cafe del Mar at sundown and here, at the Plaza, is where I find everything i need for the ultimate chilldown.

Getting here requires good legs and for the ladies, you will need to slip off those Jimmy Choo's as you enter the gateway to Dalt Vila unless you want to snap off at the ankles and get a face full of cobbled street. Head all the way up to the top and then walk straight ahead. As the street starts to narrow, keep going and you will see a narrow stone staircase to your left. Barefoot it on up past all the tiny stone doorsteps and open front doors but try and pause occasionally and peek in at the authenticity of the interior. Head on up the stone steps until, at the very top, you reach the roof patio of Plaza Del Sol with all of Ibiza old town below you. You will be greeted by crisp White linen table clothes and awnings which cover the terrace eating area.
Take a seat, order the Sangria Blanco and dwell awhile on the extensive menu of Catalonian fare before placing your order ..... now drink, chill, eat, repeat.
