I kept going back for more! We were a party of four and opted for two white pizzas: mushroom bacon and shrimp pesto. I preferred the mushroom bacon of the two. The toppings were very generous and the bacon had a nice sweet flavor to it. The crust was crispy and delicious. Shrimp is one of my favorite foods but something was missing for me in this pizza; I couldn't put my finger on it. It still tasted good, just wouldn't be my go to. These pizzas + salad was plenty and we had a few leftover slices. We capped off the meal with a brownie to share with ice cream drizzled in olive oil. I love this combo and the cold hot effect. All in all, this was a great meal in Willimantic! Prices were great and staff were accomodating and nice. I liked the aesthetics at Trigo and the fresh flowers were a nice touch. Not sure if it was just this batch or... maybe it's just a flop. Tasted... off. Lasagna came in a cast iron round pan. How do you stack big rectangular lasagna noodles in a round pan? You cant. Im used to lasagna coming out in a big square, with stacks of noodle and cheese or whatever. This was just a gloopy mess with cheese on top. Sauce was decent anyway. Next was a baked ziti with sausage. El dente wasnt in the mix, ziti was boiled too far, sausage was thin sliced but alright, once again their sauce was doable in an Olive Garden kinda way. When the bill came, we were charged $3.05 to remove a topping and another $3.05 to substitute one. That's over six dollars for a simple change that wasn't explained to us. What makes this even worse is that the menu clearly states: "Only one item can be removed or substituted. Subs must be of equal value. No exceptions." My wife simply substituted ham for bacon, which are of equal value, so there should have been no charge at all. The food itself was good, but these kinds of ridiculous and misleading charges completely ruin the experience. We won't be back.
