I don't think having signs posted in the establishment for giving them a 5 star review for a free appetizer is honest either. It's "review boosting" in my opinion. Maybe I'm being a bit too critical but I know sushi. I've been fortunate enough to travel to places and have eaten sushi from real Japanese trained sushi chefs and I don't believe this establishment is very consistent at all. If you've only ever had sushi in Kansas you might just not know the difference but sushi rice should never ever be warm. It shouldn't fall apart when you pick a roll up. It should never be gummy or overly sticky. The filling to rice ratio should be higher not the other way around. If there is more rice than filling that's a way to cut costs. Fillings should NEVER smell or taste fishy. All those are indications of poor cooking methods. I think some of the more elaborate rolls are so overly sauced and littered with toppings that it covers up a lot of these flaws but they're VERY obvious in the simpler rolls. I can confidently say after trying Hikari now four different times with long stretches in between. I've encountered all of these cooking method failures. Unfortunately all the things I've found okay to tasty on their menu have not been their sushi which I find to be concerning considering they're a part sushi restaurant. Their spring rolls are consistently good. Although I'm not sure those are actually made in house, they could very well be frozen and flash fried. Their edamame is good but that's something I can steam and make at home also so it's not exactly a complex dish. Their ramen is OK. Better than store bought but not better than the dedicated ramen places in the Wichita area.
