I think that out of all the places I want to go on the Banana Pancake Trail, Vietnam is the place I'm least excited about. This is because, to me, Vietnamese cuisine is largely bland and tasteless. I do know that when I go there, I'll have a better standard when it comes to what good Vietnamese food tastes like.
I've always had a love-hate relationship with pho, because it lacks the complexity and oiliness of ramen, or the comforting flavors of good old Tsinoy mami. However, on days when I feel stuffy, or I'm stuck at the mall and it's raining really hard, I find that a bowl of pho does wonders not just for my nasal passages, but for my general sense of well-being. My go-to at Pho Hoa is the #8 Bowl, which has tendon, flank and brisket meat in it. I love making the fatty collagen of the tendon melt into the soup, as I douse it with three or four lemon slices, throw a whole bush of sweet basil into the mix, a few chilis and a handful of beansprouts.
