The food truck is inside the building and the menu is huge, so you do not really know that you are eating from a food truck! The food was very good and to get service at U4ic, you must put a sign up at your table otherwise they will leave you alone. Wing King does all the food at U4ic and U4ic provides the drinks. You can get custom beer and hard ciders to go along with your food. Nice pairing! We loved the tacos and the wings were great also. I would stop by this food truck again if I saw it around town. The menu photos I have here are from the U4ic Brewery in Belle Plaine, MN. I do not know if they offer all of the same food when they are traveling around the metro. I tried to create a separate listing for Wing King in Belle Plaine because I thought the menu was likely larger that the normal food truck service and the Food Truck is based out of Lakeville which will not come up in searches in Belle Plaine. Yelp didn't add it after I submitted it. Enjoy the food!

I took a break for a year...then decided last Friday that a food truck lunch was in order. I gathered my co-workers and we marched out in the glorious sun to the streets of food truck land! I walked past the usual suspects and the large red truck of The Red Pig & Truffle caught my eye. At first, I was slightly confused to not see a menu...thinking there was only a single item they served...only to find the menu propped up against the side of the truck with 6 people standing in front of it. The menu is short and sweet...with The Red Pig at the very top. It listed 3-4 kinds of meats, pickled veggies, some sort of secret sauce for the average price of $10. I rolled the dice, got myself in line and waited...and waited...until I finally got a chance to order. I quickly informed the man behind the counter in a frantic haze...The Red Pig, please! Like a savage, I tossed the man my debit card...in which he proceeded to pray that his Square device would work (to not give me a free meal!). I continued to wait and saw that my coworkers were busy wolfing down their lunch...lucky turds...it looked amazing and was getting jealous that I was still waiting for what I thought would be a tiny ass sammich with a slice of deli meat on it. Alas...I hear my ordered called and I hurried over to grab my food and run. To my surprise...I was presented the glorious sammich that is The Red Pig. Stuffed like a pig with what seemed like a pound of meat, sharp cheese, pickled veggies, spinach and drizzled with balsamic vinegar. There is no normal human way to eat this monster...you have to take it apart and attack it like an animal. The combo of salted meats...with sharp swiss...deep flavored balsamic...holy hell this sammich is AMAZING. Don't forget the napkins...like a big ass wad of napkins...you'll need a wet rag...this is your SIGN to get this sammich...

There were so many choices that I wanted to try. I got the three street tacos....chorizo, steak and carnitas. My friend got the California burrito and my other friend got the puffy taco and the Las Vegas taco. The pork taco was a little dry, but the steak was perfect and the chorizo had the nice drizzle of grease. I would have liked more salsa to come with it, the containers are like thimble size. You can barely put your chip in there. My friend loved the California burrito. It was Chipotle sized and had French Fries inside. He gave it a 10 out of 10. My friend that got the puffy taco loved it and the Vegas taco was like a loaded up taco. She gave her stuff a 4.5 out of 5. Another guy at work actually hit the truck three times. Twice for lunch and her bought an extra order to bring home for dinner. Service was fast and the truck had a fabulous wrap of menu items alongside it.

I get excited for California burritos and carne asada fries- few places here have them and they bring me back to living in SoCal. They have so many variations on California burritos (all have French fries as a Cali burrito must). Their original would arguably be not 100% authentic as it has "cowboy pico" not regular pico, but is authentic otherwise. My husband had the San Jose and it ROCKED! And it comes with cheese sauce??! I had the puffy tacos- also rocked and would get them again in a heartbeat. Love the fried tortilla and the toppings. Their chorizo and their pastor both were great. My only complaints, obviously not enough to detract from a great rating, but there is room for improvement: - The puffy tacos only had one small piece of pickled onion, I wish there was a bit more as it was a great topping and I could barely taste it. - The biggest thing is that I wish they had a calendar on their website so I could plan to get their food. Instead, they only post where they will be the day of on Facebook. If they posted a calendar online, I would absolutely plan around it and therefore be more likely to get their food and with friends/family.
