We visited Pablos for the first time on Cindo De Mayo to support a local restuarant. It took around 30-40 minutes to seat us with no reservation BUT I would assume this is the busiest day of the year for them, so we expected this. They take your number so we left to a brewery down the street while we waited. The employee did get my number wrong and I had to go up to have them doule check it. But then we were seating in a really nice and spacious booth! This place has 2 for 1 drinks (certain ones)! We love that and my husband enjoyed the pacificos. I had a regular cactus marg, which was recommended by our server and amazing - very melony. For food, we started with the queso, which is wonderful. I can always give kutos to a restuarant that puts rotel in it, would definitely get again. I will say it's rather large - so definitely a shareable size. We also both got tacos, I got the fish and my husband the pastor. I loved my fish, it was large and the toppings were great. My husband said he wished it was Al Pastor and more shredded instead of cubed - but still good. Overall, we had a great first experience and our server provided us with wonderful service. She gave us advice on our meals and we had great conversation. This will be going into our regular staples! read more

I can't begin to express how much I enjoy this restaurant! It's the perfect spot to relax with a cocktail and share their incredible queso. The menu is extensive, offering something for everyone, and the space is large enough that wait times--if any--are minimal. There's also a charming bar tucked in the back, where you can enjoy a drink while you wait, with outdoor seating available too. In the summer time they often have live music at certain times that you can enjoying listening to in downtown Shakopee. I highly recommend the beef tacos with a side of their rice--you really can't go wrong. That said, there are so many other fabulous options on the menu, you'll want to come back and try them all. Update! Hey everyone, I am here today at Pablo's Mexican restaurant for another review during my tenure as the newest food critic in the Southwest Minneapolis Metro area. Our server was Erin and she was locked in all meal. Right off the bat she recommended the Jumbo house margarita which is excellent. I asked for a suggestion on dinner and she right away pointed me to the ultimate chimichanga which, as you could guess, is excellent. The vibes were sky high as we cruised through the first course without a care in the world. Bite after bite, pure deliciousness! Erin checked on us frequently to make sure we were not in need of anything and the only thing we needed was to keep those margaritas coming!! I was worried the meal was coming to a close when Erin, with perfect timing, came over and offered us dessert. Without hesitation I ordered the fried ice cream and I was not disappointed. I experienced the best fried ice cream in the Milky Way galaxy to put the perfect cap on a tremendous experience! Pablo's made me a regular customer for life! This is one of our favorite Mexican food places to go. It's a little bit of a drive for us, but the food is always great. The service has always been good and the staff is so friendly. They do the complimentary chips and salsa, however their salsa is always great and tastes fresh. My daughter loves their rice. She always gets double instead of beans. If you're a tried and true lover of authentic Mexican, here are some examples: hard or soft shell, we have "spicy shredded beef" (instead of the inquiry about chorizo), the corn tortillas were more like flour, no horchata, the place was pretty full but not one Hispanic eating or working there... Complimenatary chips and salsa is about 6 chips. When asked for more we were told it would be $5. Waitress seemed annoyed that part of our party were sharing nachos. If you are in the mood for some good tex Mex style food then here is something for you! The chimichangas are all delicious. I especially love the seafood ones. My husband likes their taquitos and jalapeño cheese wrapped spicy beef chimi. The salsa and chips are always a hit, the food is fresh, and the service is always excellent. We've been here a few times and rarely leave disappointed. I wouldn't call it homemade from scratch Mexican food, but it's good either way and inexpensive if you are in the Shakopee area. read more

Late lunch (as usual) and had heard a bit about Pablo's. I was hoping for something special but it didn't help when two servers (or maybe a manager and a server) had a conversation about who would take us as theie last table of the day. It's so nice to feel welcomed, isn't it! Anyway, our server, prior to disappearing was fine. He helped us wander through the menu and checked back on our drinks. My steak fajitas arrived pretty quickly and looked good (see photo). Upon arriving the steak was done as ordered but quickly turned to "well done" as it cooked at the table...thats understandable. I only wish the same would have been true for the veggies which were more than a bit more firm than I'd prefer. That said, the size of the lunch portion (with two soft tacos) was fine and represented a good value. The men's room could have been cleaner and I heard the same comment from another customer. All in all a good value and ok food. I want to try the other Mexican restaurants in town and see how Pablo's stacks up but hope another place will stand out from this one. read more

My boyfriend and I ended up here on accident. We just got done playing a round of mini golf and then went to Yelp to search for 'Mexican Food Near Me' and found Pablo's. Basically, I just wanted fajitas really bad so I didn't really care where we ended up. Pablo's was a mile from Golf Zone in a cute downtown area. There is a parking lot but also street parking is an option. It had two entrances, we accidentally went in through the bar since we'd never been there. After walking to the front, the hostess let us know we could sit at the bar or at a high top for drinks but no food and if we wanted to sit at a booth or table in either the bar or dining area, then we needed to get on the waiting list. Our 15 minute quoted wait time was more like 3 minutes and they used a texting system to let us know our table was ready. So, if you wanted to explore the shops just a block away, you could and then get a text when your table is ready. Our server was a mind reader. She was totally on the ball with refills and was super friendly. I won't forget her because she had a unique name but I might spell it wrong: Kysenia. We ordered queso and guac for appetizers and loved both. I ended up getting shrimp fajitas and was super happy. I got a box to go for leftovers because I filled up too much on chips and a frozen, blended strawberry margarita that was just the cherry on the whole happy accident. I talked about my dinner at Pablo's for at least a week I was so happy and impressed with the proximity to my home, food quality and excellent service. I will be back -- probably this weekend because now after writing about it, I'm craving fajitas again :) read more

Pablo's is intriguing from the outside and has a huge public parking lot right in front. However, the food is dry and doesn't quite qualify as Mexican food, in my opinion. If you are looking for authentic Mexican food, this isn't it. Everything could use a little more seasoning/spice. I really only liked the chips and salsa here. I ordered the tacos Al pastor. I usually love the pineapple juiced over the pork, but what I got was so different than what I'm used to. The pork was pretty dry and it was hard to chew. I tried to salvage it by putting salsa in my tacos. The salsa did help it a little bit, but I don't recommend getting this. Get the chimichangas instead. My boyfriend ordered that, which was better than my tacos. Luckily I ordered only two tacos instead of three. The Spanish rice was okay. It is nice they refill your chips and salsa though. I don't think I would come back. read more

I have to admit that I am in a rut - I get the taco & enchiladas combo (hard shell w/ ground beef, one cheese/onion & one shredded beef w/ black beans. For those of you that read my reviews, you know that love authentic Mexican food. This is not that. This is Tex Mex. Big portions. Shaken margaritas. Hot plates. Solid TexMex food. Tasty. I eat authentic Mexican weekly or more, but when I am craving TexMex I go south of the border (river) to Shokopee to eat here. And run into regulars many times. Give it a try.
