If you would describe our dinners at the Château as gourmet with broad strokes, what Le Napoléon offers is designed with the finest calligrapher's pen or brush. Don't come anticipating Italian, since ownership changed 6 years ago taking it on a completely different path. Now, Le Napoléon's menu includes a "bistronomique" adventure with an adept employment of innovative combinations that create a masterful, sophisticated, culinary experience. With seven of us, all opted for different things, enabling a taste of other's dishes... that is if we had room. It all started with freshly baked, warm rolls with (my first time) delicious lemon pepper butter. My appetizers included the Potage du Jour, Carrot Curry Ginger Soup, plus the beautiful, amazing plate with Beets Carpaccio and Smoked 'Iles de la Madelaine' Scallops, Dry Shallot, Herbs and Goat Cheese Mousse, Mustard Caviar, 'Ungava' Gin Pickled Onions, Fried Capers and Crispy Shallots. The Soup, a warm, velvety delight where the married three components each shined in harmony. The artfully presented Beet, et al., dish's diverse elements fitted together like a well-structured jigsaw puzzle that when whole provided a rare bouquet of flavors. Also had a small taste of my brother's choice, their house interpretation of Caesar Salad that incorporated Braised Pork Belly, an interesting twist on the ever-so-popular recipe. My main course was as rewarding as all my earlier dishes - Hudson Valley Duck Breast, Noodles, Honey Sauce, Aged Garlic, Sesame and Soya, St. Germaine Compressed Pineapple, Broccoli and Torrefied Spring Onion. Absolutely sublime!!! Everyone who took a taste said they had wished they had chosen it instead of their dish despite their deserving raves about what they ordered. My duck meat was sliced and beautifully moist, and bowl's complementing Honey Sauce bridged it with every other featured piece. While listed in the menu as Udon, some at my table considered these more traditional noodles, but no matter to me (lol)... I'd describe those noodles as excellent and completely satisfying!!! Did also try my nephew's Beef Tenderloin with Hay Wine and Pepper Sauce, Fried Scalloped Potatoes, Caramelized Onion Puree, Shimeji. Two others also ordered this outstanding dish. We're all foodies and everyone left overjoyed, with Le Napoléon being the best meal we had this trip in Canada!!! A meal to remember!!! To add, our waitress and overall service were sensational. It was a great, intimate space to enjoy a meal together. One note - their POS system that enabled them to take card payments was down. Their team called us in advance, explaining they could only take cash until it was remedied. Fortunately, it wasn't an issue for us. Overall, the meal was fairly priced considering the top notch quality. When next in Montebello, we will all definitely make it a point to eat again at Le Napoléon. Highly recommend you do too!!!

The first two dishes were a delight since it would have been the two appetizers we would have chosen before deciding on the tasting menu. Both are very good dishes! Pickled green strawberry with scallops and compressed watermelon with trout, who would have thought those go together but just wow! The two other dishes were good. Duck carpaccio and beef tenderloin. There was only one dish we did not enjoy. Rich, salty, and overpowering flavors. This was their foie gras poutine. We finished with their chocolate dessert with mushroom ice cream. This dish was pretty good however a bit heavy for a finisher. I think the dessert would of been good without the large cube of chocolate ganache. Perhaps the chocolate crumble, mushroom ice cream, poached pear and some raspberries. The service was just so so. There was only one other table, but somehow he forgot our order of sparkling water and to bring new cutlery for our next tasting. This place is a try once, and I'm good kind of place.

Three of us got Brie casserole and onion soup as appetizers and Duck leg confit and Bison steak. The taste was a pure blessing. Our absolute fav was Brie casserole. The staff were incredibly nice too- if you're a visible miniority you'd know that you sometimes experience a passive racism, but I truly felt welcomed and taken care of by the staff. Restaurant was quiet and beautiful too. Additionally I've personally always found French food's portion small in Toronto and Paris, but this place surprised me!!! Each meal came with good portion of salad and fries and the price was really reasonable, trust me. I feel like I'm writing so much to make it feel like its a paid review but we paid with our own credit cards.

We showed up for our reservation an hour early hoping to get a table since we were hungry. The hostess warmly greeted us & got us a table quite promptly even though the place was pretty full. Our server was so kind to offer and try to translate the 3 course menu which was posted on a board attached to the wall. She did a wonderful job & we appreciated her attempt. My husband ordered the steak frites and I had the bison flank steak. We both asked for it to be done medium rare & the temperature came out perfectly. The creamy shallot sauce that came with both dishes was a big hit! Good enough to be bottled. The rebellion blue cheese on the bison steak added a nice richness to this dish but was not heavy or overpowering. The quartered potatoes were crispy on the outside and fluffy on the inside. The Stella beer my husband ordered was beautifully poured with a good amount of head & from a clean tap. The ambiance of the place was just right. Lively but not too loud. We came back the next day for their wood fire pizza. We weren't a fan of this as our preference is Neapolitan style but we were impressed as this the only place that served our first slice to us on our plate. It was a nice touch! I also had their French onion soup as a starter and it was sooooooo good. We would definitely come back here again & would highly recommend it to anyone looking for good food and amazing service.

Nymark is a new venue at the Fairmount Chateau Montebello in 2024. Per website it offers ancestral Quebecois recipes with contemporary culinary techniques. In the evening we visited, the menu was small in the best way, because I think the chef curated the dishes with heart and skills. Everything was not just delicious, but curated with eye opening intent, intricities and skills. Take The Wild mushroom and Onion Casserole appetizer - such a delicious appetizer of 3 to 4 types of mushrooms with light oil and seasonings, beautifully presented. It is one of the most memorable appetizers I have ever had in a Canadian restaurant. I feel lucky and privilaged to have the chance to experience such as a well executed dish. We had Confit Cod and Cornish Chicken as main dishes. They were so different from each other. The Confit Cod was served with carrots and cornbread. It was small portioned, but I was magically satisfied. Maybe it was the cream sauce, or I had a smaller appetite. The Cornish Chicken was served with plum, barley and Brussels sprouts. It was generously portioned as in a whole chicken! Bring your appetite! Because of the price, I highly recommend ordering it as part of the D'Hote Menu. The parsnip dessert was a pleasant surprise - light tasting, refreshing and using Labrador tea, a nod to the Indigenious Culture. The Mini Pumpkin Creme Brulee didn't look like the everyday creme brulee. It was soft and didn't have the firmer texture of egg custard. It was lightly sweet. Park your expectation and just experience it.

So many menu items were of interest, I was excited to have the second dinner to get to personally explore more in another round! Every dish was absolutely wonderful! [Note - Everyday we had all our breakfasts at the exceptional buffet here, but since it was included with our rooms I reviewed it separately as part of my review of the hotel.] Both dinners had us sitting outside the majestic main hall, at tables which provided an intimacy perfect for enjoying each other's company along with the food. First dinner: + The Octopus (my starter) well-crafted with chorizo and potato vinaigrette, black garlic aioli, roasted almonds, white anchovies, chickpea salad with peppers and oranges. + Rack of Lamb jus tagine style sublime with chickpea panisse with fennel pollen, eggplant confit with local Kenauk honey, and grilled zucchini. + A shared sweet dessert. (See pic. Sorry I don't recall what it was, but it was really yummy and a perfect end to the meal.) Second dinner: + A superb (pun intended) French Onion Soup. + Local Kenauk Trout fantastic in a creamy fennel and saffron sauce, soccarat, fennel and romanesco, fennel and orange salad. + Pan-fried mushrooms - Mmm!. Again, we all enjoyed everything at Aux Chantignoles! Note - My only comment to add to my recommendation is based on my family's tendency to make our dinner reservation on the later end of the dinner window in Québec, i.e., 8 vs 6:30, not just here but also in Montréal. Perhaps that time can be out of synch with how restaurants here handle their peak dinner service flow. On occasion when we did, service as the meal continued seemed more staggered and drawn out, so would take that into consideration when planning your evening.
