One of my many super powers that aren't really that super is an above average tolerance to the cold. It is the not-super power that found me at Nitro Lab on a 16 degree and raining Melbourne day. There aren't that many flavours at Nitro Lab but they all look cool and are made in front of your eyes with Nitrogen from a giant tank. I don't know the scientific explanation, but ICE MADE IT GOOOOD. I can't go past Salted Caramel so that's what I got (with popcorn). My mum went for the waffle and coffee combo. The caramel was good. I tried the waffle. I have never been a fan and the chocolate sauce isn't great. But according to the girl behind the counter these are the best waffles in the city and she has been to lots of waffle places and started rattling off numerous waffle places I have never heard of as if to support her story. I think I'm more inclined to go to Messina for the flavours but this was nice for a change. read more

OK so the whole nitrogen x gelato fad turns out to be quite tasty! Its really a no brainer - you have 5 flavors to choose from (which they change on a weekly basis i think), they mix it in a mixer with "fresh" liquid nitrogen. and in about 5 minutes - depending on how busy they are - you have gelato! My money is on the salted popcorn caramel!!! read more

A cool experience. Welcome to The Lab, A science experience room filled with beakers and N2 liquid nitrogen. Great theory and its got that WOW factor. A ice cream joint. This is some pretty EXTREME GELATO! The menu isn't extensive but walking past, we saw smoke coming out from the mixer and couldn't resist stopping and watching. Though it was a cold and rainy night in Melbourne, we decided to try the punchy passionfruit cheesecake gelato which gets made fresh in front of your eyes! Basically they use liquid nitrogen to churn out your order and create instant fresh gelato! The sign says there are no preservatives, no stabilisers, no artificial colorings, and using only fresh ingredients. A fun experience but I'm not sure if I would pay $6 very often for an average serving of gelato. The flavours weren't quite right for my liking, it was a bit too tart though I understand this is because they don't add anything else. Difficult choice but I would encourage you to try one for yourself so you can see the process! read more

I really wanted to like The Lab. But maybe I was destined for disappointment as I was still on a high after my first visit to Gelato Messina (personal favourite gelato in Melbourne!) But this venue seems to be a bit more showy (watching the liquid nitrogen vapours spill over the counter was cool), but over-all I wasn't very impressed with the outcome. There were only 6 flavours to choose from - three of which were the basic chocolate, strawberry and salted caramel dressed up to sound a little fancier. I wasn't that excited by the flavour selection. But if I was, the single serving sizes were large, cost $6 a cup, and prohibitive to ordering multiple flavour combinations. Entertaining for a one-off visit. But if you value taste and variety, then head elsewhere. read more

We had the cookies & cream (topped with whipped cream and garnished with a chocolate cookie). This one was excellent - the gelato was rich and silky smooth. We also ordered the Gaytime Crunch, which was a bit of a disappointment. The salted caramel gelato with chocolate chips just didn't taste like much, and the texture wasn't as silky as cookies & cream. It was topped with butter biscuit crumbs and dark liquid caramel, which helped a bit. All in all, it was decent but I wasn't blown away. They do accept cards and Apple Pay. read more

So I know fro-yo is all the rage. But man, what I wouldn't give to live on Nitro Lab for dessert for the rest of my time. An ever changing menu of between 4-8 designs, think things like Golden Gaytime, or Rasberry Sorbet with Nutella, or dairy free Piña Colada, or the little bit of heaven that was chocolate ice-cream with Milo and Nutella and something else chocolatty and amazing. You can also mix and match your own, and add a syringe with toppings, and get everything served I a cup, a waffle cone, or on waffles. Fun Fact (quite obvious from the name and other reviews): everything is frozen using liquid nitrogen - which means it's quick, and looks TOTALLY COOL!! read more

Nice little concept. A cool little store in the CBD where you can watch a milk mixture become ice-cream in the blink of a puff of nitrogen smoke. We had the milk chocolate with homemade brownies and the salted caramel popcorn, however the flavours here change on a weekly basis and they always have 8 going at any given time. The gelato was seriously silky smooth and had nice flavours, and is extra enhanced if you add a syringe filled with some yummy sauce, however I slightly prefer N2 in Sydney with all their exciting new flavours, that are just that bit more pronounced. Don't get me wrong though, this is a great addition to Bourke St and I'm actually quite surprised more people don't know of this place, but I'm sure when word gets out it will definitely be a Mecca come summer time! read more

Cool to look at, the ice cream itself is pretty average. The making of it is pretty interesting, although It kind of just looks like a science experiment out of a high school classroom. The nitrogen impregnated gelato from The Lab makes Elsa from "Frozen" a very happy ice queen. Over the years I have seen too many stores around Melbourne succumb to the mediocracies of business ideas. These stores launch up the fabulous 'new thing' without taking consideration that all the 'new thing' stores are pretty much exactly the 'same thing'. This not only frustrates me as a consumer, as I want to be enticed to buy things through the uniqueness of the store, but also creates a business ecosystem that is bland, unimaginative and downright boring. The Lab does away with these concerns, and it does it well. I must admit that the first time I visited this store was not on the first occasion of me walking past it. It was probably the fourth or the fifth, but the fact that I kept thinking about going was a good indication that the way this business is selling their product was unique and inviting. The gelato from The Lab was actually quite decent, though I could comment that it's probably not the best gelato I've tasted. The taste and the flavours didn't quite hit me as awe-inspiring, but the run-up to having the cup of gelato in your hands WAS. The way they made the product was so unique that I'd buy it again just to see them make it again. Though, with enough repetition, I think the vanity will soon rub off. The prices were not too shabby either. I believe I paid $8 for my cup of mango passion. It's a "Meh" situation, and I can't really say anything more than that. It seems to me that the show plays a more important role than the product itself, but hey it's still decent. Overall, The Lab shows promise.. I think it's trying to hit a niche in the market that other businesses are not taking advantage of. At the end of the day, though, The Lab does make for a good treat after dinner. The gelato they serve wasn't half bad and the fact that they drown that bowl with nitrogen makes for a pleasant experience. ..... Though, I wonder if the staff are actually HazChem trained. Price wise I'd suggeat going for the cone over the cup you get more for the same dollar. I thought $7.50 was a bit much for one scoop, however your paying for the convenience. I went with the golden gay time option in a cup, as it was a very warm day. I thought it was quite good..mainly because I love golden gay times. First time we went here was in 2014 and I am so happy that it's still here now in 2016. One of our first nights we stopped here for some dessert and got the Ferrero Rocher gelato with an added caramel syringe. And the other day went back and got the Golden daytime. Both were really delicious, but the Rocher one is definitely a favourite. They have already made the ice-cream with the liquid nitrogen so the novelty of watching them make it is kinda taken away - which is kind of disappointing but I guess they have to be prepared when big groups of people come in. read more

Similar to the N2 gelato in Fitzroy, The Lab in central Melbourne uses liquid nitrogen also to make their gelato creations. Similarly in the lab theme, they have a transparent glass wall separating you from their little laboratory where you can watch the white-lab-coat donning assistants make your order. A neat clinical feel with the beakers and tanks of liquid nitrogen on display. A different, short range of quirky flavours on offer- friend got the Milo one- being a huge fan of it and chocolate. She tucked in quite happily and I got a small taste of it before it was all gone. Was chocolate-y yum. Have also heard of an intriguing green tea and curious black sesame that I would love to come back and try! Quite a queue for it on at early evening hour, that kept growing with time passing- so obviously quite popular. Definitely an experience- go get a liquid nitrogen gelato! read more

There seems to be a craze going around Melbourne of liquid nitrogen ice-cream. That and salted caramel! Located on Bourke St, it's perfect walking distance from the office. I tried the salted caramel popcorn ice-cream which at $6 a cup you would expect to be off the chain delicious. However to me, this particular cup lacked that distinct salted caramel flavour, rather tasting more like a mild caramel ice-cream. The popcorn was also on top of the ice-cream, rather than blended through and I felt lacked any flavour. If you want your salted caramel fix or liquid nitrogen ice-cream I'm sad to say that you might need to try elsewhere. read more

I would recommend Nitro Lab to anyone. It's amazing how they make the ice cream and you can watch it all! They have very odd flavors, you wouldn't think to try. It is expensive but nitrogen is not cheap so it's quite understandable. Next time you're in the area go check it out! read more
