we walked into a milestone birthday that already felt special, and somehow the evening only elevated from there. the sushi team, three staff members, were busy setting up, calm and precise, moving behind the long table in quiet choreography. you could hear the soft torching, see the careful slicing, the deliberate plating. nothing rushed. nothing chaotic. just focused craftsmanship.
the presentation was stunning. clean lines. layered wooden platters. vibrant colour everywhere, blush pink salmon, deep ruby tuna, translucent ika, golden tempura. the table was lush but never crowded, styled with greenery and height that made everything feel curated rather than stacked. it looked like a private omakase counter had appeared in the middle of a celebration.
what stood out immediately was the restraint with the rice. every piece felt balanced and thoughtful, more fish, more texture, more flavour. you were not filling up on rice, you were tasting the ingredients.
vegetable tapas started things off, bright, delicate, and beautifully composed. then came shrimp tempura, perfectly crisp and light, not greasy in the slightest, just that ideal golden crunch that shatters softly before giving way to sweetness. the truffle tuna on chip was a little bite with big presence, rich, aromatic, indulgent without being heavy.
then came the signatures, where it truly became an experience. salmon carpaccio, silky and luminous, almost glowing on the little spoon. the assorted sushi featured ika shiso, botan ebi, and yellowtail, each piece clean, fresh, and expertly cut. the sashimi selection included salmon, yellowtail, tuna, and hokkigai, sliced beautifully, each bite melting on the palate.
the assorted aburi of engawa and unagi were lightly torched, smoky and buttery with just enough warmth to release their aroma. torch salmon pressed and torch scallop pressed offered that perfect contrast of warm against cool rice. local uni sushi was creamy and ocean sweet, pure and briny in the best way. the wagyu beef uni sushi was my favourite, rich, indulgent, almost decadent, that buttery beef and velvety uni combination was unforgettable.
the signature rolls brought playful balance. yellowtail mango was bright and refreshing. cajun albacore carried a little heat and a little edge. tobiko roll delivered a subtle pop and texture in every bite.
elevated and beautifully executed. a dining experience that did not just feed guests, but truly impressed them. absolutely unforgettable.
