From simple salad to lightly grilled fish, marinated ribs to grilled veggies, every single dish stood out as incredible, distinctive, and worked together - one of my fondest memories of my trip to Vancouver in 2018. He also made a philippino-inspired shrimp paste sauce for meat that had so much flabor and umami that I wanted to take it home with me. Apparently, he was on Top Chef Canada and no wonder, he surpassed all my expectations of cuisine not experienced even at the best restaurants in Vancouver. If you have a chance to taste his creations, you should try him now. Because if he were in Los Angeles or San Francisco today, he'd be opening a top restaurant.
