I strolled in after a long day of convention chatter downtown, feeling like a city-slicker cowboy wandering into an old ghost town. I pulled up a seat at the bar, surrounded by locals swapping stories and laughs. Behind the bar was the owner himself, ready to give me the lowdown on the beers. He suggested their Revolution beer but warned me it didn't come out quite like usual. so they added mango. Being the adventurous type, I said, "Why not?" First sip... home run! Easily my favorite of the night. One beer turned into a few, and before I knew it, I was closing the place down, talking with locals and the owner like we'd known each other for years. It was so good I came back the very next day to finish the beer list and check out the food. And let me tell you; Lord have mercy..... the food matched the beer in greatness. Perfect beer food. I started with the spicy habanero cheese curds (fiery but addictive) and then went in for the kill: The Rachel Fully Loaded with turkey, pastrami, and bacon on marbled rye, with chips on the side. That sandwich didn't stand a chance. Every crumb vanished. Naturally, I enjoyed a flight and stocked up with a couple of growlers to go. (Flip Flamingo Rule #1: Always keep empty growlers in the car, just in case.) The owners also mentioned they're moving to a bigger location closer to the reservoir, hopefully in September. I also ordered the Velvet Smoke mezcal cocktail, and wow, it was exceptional. Smooth, perfectly balanced, and not too strong. The smoky notes were present but not overpowering, and the nixta slate liqueurs, or heat and bitters brought everything together beautifully.
