Niman holds itself in high regard for its humane treatment of its livestock and for the quality of the feed they use. We were doubtful, and pleasantly surprised at the high quality of this pork. It was exceptional. Until it wasn't. We put their loin on the menu as a Pork Chop. A great hit! A few weeks in we placed our third order. Unfortunately, it was not the same as the previous orders. The meat was damaged. In the industry what we got is called PSE pork; the letters stand for Pale, Soft, Exudative Pork--the meat is mushy, liquid runs out of the muscle cells and if it's really bad one can put a finger through it like mayonaisse. There are only two known ways this can happen, and it should never happen in a top quality, expensive "heritage" product. Either the animal was abused (scared, beaten, attacked) before slaughter, or the carcass was improperly handled after slaughter (cooled down inapproriately). I tried to make use of the product but was sorry I had purchased it; (we usually do not buy meat products from large concerns like Niman as this is the kind of thing one gets from a "name"). When I could not get a good result with this meat I wrote to them via their website, hoping they would rectify the problem and assure us it was an anomaly, but like all large companies they ignored us. I grew up in the meat industry and have over 55 years experience handling and cutting meats both in our family market in Carroll Gardens, Brooklyn, and in my restaurant in Norwalk CT. I know what PSE pork looks like and I know what proper customer service looks like too. By the way, PSE pork will not hurt people who eat it, and a lot of it is eaten in product meat (sausage, baloney, etc) but it is tough and dry when cooked and not something one finds on the menu of a New York Times 3 Star restaurant.
