Recently went back to motorino and it is no longer the same sadly. I dine in during a weekday lunch time, however, the pizza is no longer that saucey and perfect. Not sure if it is because of covid so the quality goes downhill?

A paean to the near-perfect pizza or 10 guiding principles and/or parables of the Motorino pie: 1. Pizza shall not exist as a mere delivery vessel for meat and cheese (someone please tell that to the schmucks at Paisano's) 2. Thy crust shan't be cracker thin and devoid of flavor (looking at you Cafe Deco and Pizza Express). Rather it should have a semi dense crumb structure somewhere between the upper and lower bounds of L&B Spumoni Gardens (dense) and Luzzos (floppier but acceptable) 3. Thy crust shall be blistered to a calico effect and should be pliable to fold in half (although those weirdos in Naples eat it with fork and knife - a forgivable sin) 4. Thy end crust shall sport a puffy but tamed 'corcione' (which is what pizza nerds call the end crust). Nor shall the crust be discarded, for thine is the best part of the pizza 5. Thy sauce should be made from San Marzano tomatoes and generally should be uncooked before going into the oven 6. Thy mozz should be fresh, and not that shit that comes pre-shredded in a plastic bag. Also if you call it "mooz" or "moozadell", you're an asshole or from Bensonhurst, NY. Or possibly both 7. Thy shall be limited to no more than 4-5 toppings, such as a pizza of excellently charred leaves of brussels sprout nestled with smoked pancetta and redolent of garlic and pecorino ($168) at Motorino 8. It's a sin to covet thy neighbor, unless your neighbor is tucking into a Motorino margherita ($138), a triumph of what pizza can and should be - a celebration of that perfect crust, good quality mozzarella, bright tomato sauce and a kiss of basil 9. When opening the overseas outpost of a beloved New York City staple, you shall keep all of the touches just so - an excellently curated menu of Italian spirits, reliably tender and satisfying meatballs, and cramped tables so that one might rub elbows with thy neighbor (and get a sneak peak of what they're enjoying) 10. Pizza is like sex. Even when it's bad, it's pretty good. Thankfully at Motorino, the pizza is fantastic. rAmen

Motorino in Brooklyn is one of my favorite pizza places and since moving to HK I've been craving some good pizza so was so excited to see that there was also a location here. I saw that they were doing a restaurant week special so I went for lunch. The green salad was great and simple. I ordered the sopressata pizza. The flavor components were good and the spice level was just right (if you like spice!) There is definitely a difference though than the original Motorino and I think it was all in the crust. Instead of being thin and crispy this was a bit thick, and seriously chewy...like stale chewy. I love the crispness that comes with wood fired pizzas and this was definitely missing that. I also felt really off and sick the rest of the day and that's what really turned me off.

If you are looking for Italian Restaurant with a great Pizza - no whistle and bells. This is the place to go. Wood oven Pizza with good ingredients. Friendly and proactive staff. My favorite Pizza Place in Hong Kong

Pizzas are made to order. The crust is pretty chewy and you can either order from the menu or create your own pizza. It's definitely much better than Pizza Hut or pizza express and a pizza ranges from 150 to 200 hkd. If you are in wan chai and craving for Italian, this is a good option. They also serve pastas and salads. Nothing really stands out but good comfort food in a relaxing ambiance.

Great pizza, great wine, great place. The sparkling red wine goes really well with the stone-oven baked pizza.

I've visited this place twice for lunch, the quality wasn't consistent. First time was truly awesome, but second visit was so so. The base was much thicker and more soggy. Completely different texture, taste was the ssme. I guess it was a different cook's touch that made all the difference.

The Romana-style pizzas (with the stretched, thinner crust) deliver a perfect crunch with every bite. The ingredients taste fresh, from the rich tomato passata base to the creamy mozzarella. If you go, do not skip the iconic Dough Balls with garlic butter to start; they are a classic for a reason. The Service The service is efficient, welcoming, and attentive without being intrusive. Even during the busy weekend rush, the staff manages to seat guests quickly and keep the pacing of the meal seamless. Drinks arrive promptly, and the wait times for the pizzas are impressively short, especially considering they are baked fresh to order. The Ambience The atmosphere strikes a great balance between casual and vibrant. It features a clean, contemporary design with open kitchens, so you can actually watch the pizzaiolos tossing dough. It has an energetic buzz that makes it versatile enough for a relaxed date night, a catch-up with friends, or a hassle-free family dinner.

The eggplant wasn't overcooked, so it had a nice nutty flavor. The dressing was light and not too overwhelming. They have locations all over, including this one just outside the A5 exit on the Wanchai MTR. It is popular, flooded with youngins and commuters daily at all hours. There is mostly counter seating for folks, which is perfect for all the people watching. The lines can be a little intimidating, especially during lunch time, but they move fast. There is a certain appeal to places where one can be in and out, ideal for the fast paced Hong Konger. From my eyes, there are only two acceptable scenarios for consuming this pizza: being drunk or being broke. Inebriated dining is only great for sobering up and budget dining doesn't exactly apply given the pricing. Ultimately, the pizza is floppy where the crust lacks any crunch, sauce is subpar and even the toppings are suspect. Many of their slices feel doughy and the char is non-existent. This is really sad pizza. The mostly Nepali staff is nice, which merits another star in my book. But even solid customer service doesn't make up for a lack of quality. I will take my chances on another pizza joint, but not Paisano's.

Paisano's tries really, really, REALLY hard to be that kind of place but it fails. It's like coming up to a fireplace and not having any heat. Obviously Paisano's is trying to evoke New York style pizza with their overtly named slices like The Manhattan and The Godfather and I'll even admit the ovens look like they should but they don't put them to good use. Asking them for a slice is risky to begin with since there are flies all over the place and you hope having it warmed in the oven will just kill anything that isn't supposed to be on there but when we got out slices they were cold. Cold slices?! that's just...NO. There's a ton of staff there behind the counter but no one bothers to clear anything. While we were waiting two spots opened up and we had to push aside empty plates and cans. We tried to throw it away in the bins but they were full. I get it, no one really cleans up after themselves in HK but having an overflowing garbage can isn't going to encourage anyone to do it. I had a lot of hope for this place but finding a good slice isn't going to be from here.

My favorites were their shiitake white pizza and their salted egg yolk carbonara! For the pizza, the white sauce was well seasoned, creamy, and cheesey. There were also generous pieces of shittake and the truffle aroma from the truffle oils was pretty prominent. The salted egg yolk carbonara was a nice mix of Chinese salted egg and traditional Italian egg yolk. You could definitely taste the salted egg yolk but it wasn't too strong, especially when mixed with the famililar bacon and cream flavors. The spaghetti was cooked al dente :) I also want to give a shoutout for their condiments and popcorn shrimp. They have this self serve condiments section by the bar and one of the chili oil is a fusion twist on Cantonese XO sauce that mixes Italian pepperoni. It was super fragrant and just the right level of spice! The popcorn shrimp was also a nice appetizer. I'm not a huge fan of smaller shrimp but they do a good job of coating it in a light batter and in their own slightly tangy sauce, which has a mix of mayo and sriracha. Overall would definitely recommend if you're in soho/central!
