Reservations were completely booked up so no tables were available until 9:30 pm. My one complaint would be they told us no tables were available, but they left at least 4 tables completely empty for over 30 min and wouldn't let other people sit at them. They said it was for reservations who had ended up canceling because of the bad rainy weather that night. People were turned away at the door when tables were available. We ended up loving sitting at the bar because we got to chat with the bartenders and see the chefs make the pizzas. The crust for the pizza is literally perfect. The chewiest pizza I've ever had. I usually leave the pizza crust but I ate all of mine this time. My partner and I shared a focaccia with whipped ricotta for an appetizer. And we got two pizzas, one red sauce and one white sauce. The meatball pizza was absolutely delicious with the red chili flakes that are provided. And the artichoke pizza balanced well with the fresh arugula and pesto sauce. I enjoyed it enough that I didn't wish I was somewhere else, which in Asheville is saying something, and I liked the innovation on the menu. They have inside and outside seating although I am not sure if the patio was open while I was there. Personal sized pizzas were all gluten free so to get regular crust I had to order by the slice. Next time I will just order a large. Ordering by the slice is a nice option as you can try a few different types of pizza. I got to try the Hawaiian and the White. Both were delicious. Beverages were just cans or bottled water as water wasn't potable when I was there. I'm sure there are more options now as Asheville water is now drinkable. Almost every beer on the menu is a split batch fermented with two different yeast strains to showcase the resulting differences. It's a great concept, even if you're not into brewing. In terms of the food, it seems like the really leaned into providing something good, well-balanced, and sometimes takes advantage of the yeast and beer being cultivated on site. I had a house salad and some dilly beans for lunch. The house salad was fresh and extremely well balanced. I'm glad they had something vegetable centric available. The dilly beans were good, but quite a bit for a single human. They're probably the type of thing you would want to split among friends. I actually showed up for an event in the evening where they served pizza using dough fermented with one of their yeast strains. That was truly excellent. Nicely balanced, not over the top, with a deeply flavorful crust. If you're in Asheville, I would consider this a must visit destination.

After about 5 minutes my name was called and I got my pizza and left. I noticed when I got it it wasn't hot, but it felt warm. I only live 6 minutes from there. When I got it home it was luke warm and burnt. The crust was tough and couldnt finish it. The cheese was black in spots. I have never had a problem with the pizza from there, but this time I was really disappointed. The pizza obviously had been ready when I first got there and the guy didn't look well enough for it. I will be hesitant at buying pizza from there again. If I do, I will make sure the box is hot on the bottom and the pizza isn't burnt. This was at the Biltmore location.
