My hubby and I had lunch here. The main restaurant was full so we were whisked to the building in the back area. This area with white linen table cloths seems more private with limited seating. It felt very exclusive. We ordered their traditionally prepared cuchinillo, grilled vege platter, tiramisu with toffee, coffee ice cream with amaretto jelly and the traditional layered cake with vanilla cream and ice cream, capuccino and a glass of red wine. The service was impeccably attentive. When it was time to cut the roast pig, the owner, Jose Maria appeared. We were gathered around to watch him deftly cut the pig with a plate into several servings. The cuchinillo was perfectly seasoned. The skin was thin and crispy and the flesh was moist and melt in your mouth tender. Everything we ordered was delicious! Latent Review. If you are going to eat suckling pig, this is the place to go. You need a reservation. Decor is upscale. Food and Wine Service is top notch. They present the whole suckling pig to the table and then using a thick plate, chop it into portions. It's quite an event. Suckling pig is delicious, melt in your mouth goodness, skin crispy and an absolute delight. This is the place to eat this dish, a full measure above Casa Botin. It's worth the 30 min high speed train ride from Madrid to Segovia. Besides, there is quit a bit to see in the town, walk and build your appetite. They have their own farms and winery. Made a reservation ahead of time, and there were no issues with getting seated. They give you a complimentary dish of mini toast with bread/jam to get started. I got the cochinillo (roast suckling pig), and my boyfriend got the pulpo. The cochinillo was incredible!! So tender and juicy! The meat was sitting in delicious juice, so every bite was heaven. The roasted suckling pig didn't disappoint. The skin was crispy and meat was tender and moist. At €30, you get a healthy portion. Even though it's delicious, It's a lot of pork to consume for one. I would get more variety for the table to try different items. Interior is very upscale and modern. Service was very good. I would suggest making reservations. Or say people say... honestly, pork is pork and it's all good to me, but we had to try this place out since it came highly recommended and had a gang of people waiting outside! Quite a feee gars and everyone sells conchillo and poncho segoviano. I really like this sport :/m-) and I think the family that established this was extremely well respected in this community. We know Spain (especially Madrid) loves pork! And conchillo is a speciality. It's basically a young suckling/ pig (less than 15 days old) and roasted to crispy perfection! It's served with bread and some au jus. It's basically carnitas. At this spot you can dine in OR like us.. order at the front bar with the other zillion patrons, and try to find some book, cranny, ledge to lost up with your food. Yes - you may have to stand while you drink sangria and eat tapas ! I'd also like to recommend the paella for the sheer fact it was SOLD OUT by the time we got there. Food was very good. Both my husband and I had the suckling pig which was delicious. Appetizer of anchovies and sardines was also good. The waiter suggested a bottle of red wine specifically bottled for the restaurant and it was enjoyable. Service was good too. Outstanding top notch service. The steak that my daughter got was amazing, perfectly cooked and flavorful. My wife got the crispy pork which is the speciality in the city. I'm not a fan of pig, but it looked authentic. I had the fish collar suggested by the waiter and it was delicate and nice paired with the fresh vegetables. We had some drinks and appetizers in the bar area at the front of the restaurant by the entry and it was nice to try some small bites on the way into the main dining area. Suckling pig is a big deal in this part of the country and if you come here you have to try it- nope you gotta put politics and food thoughts all away! I tried it - it's amazingly delish - but for my meal, I went for the pork medallions instead. Mostly because They weren't looking back at me while eating! We were a group of nearly 50 and we took over a large dining room. Service was outstanding anyway but truly noteworthy with ALL of us! Food was nicely prepared and presented. While the place is packed in a bit touristy, their famous suckling pig is definitely a reason to come and visit. Highly recommend making a reservation in advance through texting them on WhatsApp, which makes things a lot easier. We ordered the suckling pig for one instead of the entire tasting menu, knowing that we're probably not going to be able to finish it, and I have to say the dish for one is really fit for two so I'm glad we made that decision. Also got a regional dish, made of tripe, snout, and shank. Definitely an interesting dish, but I would not recommend this for the faint of heart. Much appreciate how their menu was marked clearly for allergens, and was able to accommodate for a gluten-free meal, including gluten-free baguette's. At the end, I was even able to get a very tasty gluten-free cake which they called the tart, and it was quite good. This place is a beautiful representation of the food and culture of Segovia. If you ever happen to be in the region, stop in to get some vino (wine) and calamares (fried squid). But this restaurant like many others in the region, is known for its Conchillo! Which is roasted suckling pig. It's so juicy with crispy skin it literally falls off the bone. To make things better they serve it in the juices leftover from the roast. All you need with this dish is the side of pan (bread) that it comes with. Remember to not eat too much and this is Tapas. Very delicious! If you plan to dine here, I would make a reservation because it tends to get quite busy. Segovia is famous for its roasted suckling pig, and the portions here are very large, juicy, and tasty. I would recommend taking a look at their "creative new dishes" section of the menu. If you plan to split the bill, let the waiters know ahead of time -- we did not and he had quite an attitude about it. Additionally, the waiters can be forgetful and the food takes a while to come out. However, it was a nice dining experience overall. I would definitely recommend dining here if you are in the area. I was super stoked to try José María's suckling pig. Maybe it was my excitement, but I left kinda disappointed. The pig is super tender on the inside. It practically melts in your mouth. The skin is perfectly crisp. Although it wasn't bad, its not my cup of tea. It has an overwhelming fatty taste that turns my stomach. We accompanied our meal with patatas a lo pobre, (potatoes thinly cut and served with onions and peppers) and salad, both of which were just okay. We also ordered sopa catalana (garlic based broth with egg, ham,and rustic bread) which I had a lot of expectations for and was very underwhelmed. My husband who in no manner is trained in the art of cooking made one ten time better. By and large, we paid 73 Euro per Couple for a meal that by no means was even memorable. Service was prompt at times but been an asian I always feel that I am obliged to converse and read espanol. Anyway below is my menu for that evening; Starter: white bean stew.(it was not to my liking as it lack flavour and tasted plain-can skip) Mains: cochnillo asado pair with red wine.(astonishing tender on the inside and crispy on the outside but take note on the sauce which is a bit salty but very flavoury which is best drizzle lightly on the meat- must try) Dessert: ponche de segovia (beautiful combination between taste and looks- must try) I think overall with comparison to others cochnillo I have tried. Worth the hype. The cochinillo which is their highlight dish was amazing. Warning: you will feel twinges of guilt as you relish the melting pork knowing that you are enjoying a baby suckling pig more than you should be. Crochettes were amazing (and stuffed with beets!) and one order of the pig was more than enough for two people! Quick tip: if you are short on time in Segovia (we had a 4 pm bus and we only had an hour to dine) you can order the full menu at the bar and just stand and eat. When Husband was fourteen years old, he saw a video in Spanish class that showed this restaurant. He swore to himself, "Someday, I will eat that piglet!" This summer, more than twenty years later, he did...and he was not disappointed. The thing to realize about Jose Maria's is that it is mainly about the spectacle. If you don't allow yourself to be caught up in it, you may walk away unhappy. But if, like us, you came to see the show as well as eat the food, you will most likely be thrilled. We were a party of ten, so we had a huge round table on which to display all of our courses coming out, and two servers to spoil us. Add to that several bottles of wine, and by the time Jose Maria came down, donned his huge gold pig-chopping medallion, and set to work hacking our pig up with a dinner plate, we were all giddy. It was a fantastic experience, and the food was equally good. We all had the cochinillo asado (duh), with starters of salad, sweetbreads, and tempura vegetables. It was difficult not to fill up on the starters--the tuna in the salad was so gorgeous that I wouldn't allow a single chunk to be cleared from the table; the kidneys were rich and tender and plentiful, and many of us had second and third helpings; the veggies were fresh and firm. The main event though--the piglet--cannot be equaled. I have read several reviews from diners who did not like the richness of the meat and the sauce, it being so beautifully fatty, but I was ready to pour that fat sauce right down my gullet, it was so wonderful. It is difficult to stick with utensils at this point, as the meat is so tender that you just want to get in there with your fingers and pull out the choice bits. I have only one complaint about our experience. As the piglet is sliced into six pieces, there are many different cuts to go around. Husband was smart enough to ask the waiter for a face piece. Friend got stuck with the ribs, which, while still tasty, had a much chewier skin, so she wasn't sure why we were all blissed out over the crispy skin until I started sharing mine with her. I got ass...tail and all. I couldn't say which cut is the best one, but they are not all equal. So, was our meal worth the three-hour drive? Absolutely. We tried here because of good reviews on TripAdvisor and they are one of the certified conichillo asado dish restaurants. Micheal and I ordered some tapas and one conichillo. The dried lamb salad wowed us. It was very good. The meat was so tender and the vinegrett dressing was perfect and refreshing. We were not impressed by the conichillo though. It was just not our taste. They brought us with incorrect check with almost 100 euro more but when I pointed it they corrected it immediately and apologized. It must be a mistake, so not a bug deal. I am judicious with five star ratings. This is a really nicely operated establishment. If you're not into eating fetal pig, don't worry. There, are many other excellent options on the menu. The "rustic" soup is a phenomenal "appetizer" and it comes out, as warned, very hot. This is more appropriately shared between two people because the serving size is massive. Americans beware! Don't be fooled by the term "suckling pig". We Americans automatically think pig roast meaning lots of pork meat. Do not order this disgusting dish at this restaurant! As it turns out, Spain's version of "suckling pig" is the skin of the pig attached to about a 1/2" layer of disgusting fat. That's it! No meat included in this dish at all? Basically they eat what we cut off and throw away. It's a nice restaurant but don't order pig in Spain. Order a steak or burger or tapas. Love the town and the Roman aquaduct. read more
