The Chaufa was likely one of the best I have had in the states and the sauce that comes paired with it complements the flavor beautifully. The dorado was perfectly cooked, and the vegetables were packed with flavor. Lastly we finished the meal with picarones. They were crunchy with the perfect syrup to top it, not too sweet, crunchy and fresh. Overall a wonderful meal. The seating was a little tight and my neighbor and I accidentally bumped each other a bit through the meal. Unfortunately, we ended up waiting over 40 minutes for Chef to take our order since the team was working on other parties before us. While this makes sense, I wish the reservations were better timed to accommodate for this instead of us having to wait for the kitchen to clear up. After we ordered, the food came out decently quickly. I tried almost all of the non-main dishes and my favorites by far were the hamachi & truffle rocoto, the blue fin tuna ginger, and the Hokkaido hotate sashimi. All three dishes were very unique and fresh. I would definitely come back just for those three items. The other dishes were good but were either too sour for my taste or lacking originality especially given the price tag. I tried the chocolate with lucuma dessert and thought it looked beautiful and tasted great making it a great end to the meal. The flavors are authentic and consistently excellent, you really can't go wrong here. Right now I'm hooked on the pulpo causa. The octopus is tender, the causa is perfectly seasoned, and the balance is just right. They also do the best lomo saltado I've had outside of Lima, and the chupe de pescado is rich, comforting, and full of depth. This place is a classic for a reason.
