Chef Bruce in the background. He gave us a free sample of this delicious fatty tuna sashimi!

Been a fan of Chef Bruce Rickett's work since I got to try Sensei in BF Paranaque and when I heard that he was opening a new restaurant in Fort, I got really excited. For one, it's a lot nearer to my place, and two, well, it's Chef Bruce! Entering Mecha Uma, you'll think it's a pricey restaurant, but for the quality of food that goes to your belly and the location of the resto, it's worth it. I PROMISE. I would recommend making a reservation, especially if you're a big group, since It's pretty much the new resto to try right now. I actually got pretty lucky that I got a table on my second try because there were only two of us and we arrived at exactly 6:30 PM (their opening hour). The menu can be a little confusing, but the staff readily helps you understand the courses. He serves a variety of fusion Japanese dishes that may sound weird at first, but once you get that first bite, it will suddenly all make sense. From lamb, to beef, to fish, to scallops, to oyster, surely you'll enjoy. It's actually difficult for me to pick a favorite dish! Servings are small and you may think that you won't get full, but based on experience, you will get full. That or you'll just keep ordering a bunch of small servings and end up with a food baby in your tummy. If you decide to sit by the bar, you'll get to meet and chat with Chef Bruce and hear him rave about his passion for cooking. Maybe if you're lucky, he'll throw in a free dish for you. Or maybe I was just THAT lucky that day. I have yet to try his tasting menu which only happens every weekend and Mondays, but I already have a jar of savings for that alone. He sits the tasting menu guests by the bar so he can explain what the dishes for the day are. Everything (including the ala carte menu) is served 100% fresh! They're closed on Tuesdays and only serve dinner on the days they are open. But hey, you have six out of seven chances in a week, it's definitely worth the experience.

This restaurant is probably one of THE hottest restaurants in Manila right now. Everyone is dying to get a reservation just to be able to try Chef Bruce Rickets take on Japanese food. Fortunately, I was able to finally get a reservation for an early dinner one Sunday evening for the a la carte menu. The special 10 course meal would have to wait for another time. When I arrived, I was surprised to see how small the restaurant is. Guess this is why it makes it even harder to get a reservation. The interior was very modern and did not look like a Japanese restaurant at all. Their menu was very simple and was laid out into One, Two, Three, Four with one being appetizers and four being dessert. So we ordered the tuna with foie gras cracker, seared scallop sushi, oyster with foie butter, Matsusaka steak and both the chocolate and coconut dessert. Everything tasted like heaven in your mouth! The only downside is how small the portions are for the price so get ready to spend A LOT of money here.

What can I say this place is outstanding! From the minute we walked up to the restaurant, we knew we were in for a nice treat. Before we even entered the restaurant the lovely gentleman standing outside greeted us. We were 30 minutes early and didn't expect a seat, however the maître d' was extremely apologetic that a table wasn't available and worked furiously to find another table for us. Meanwhile we entertained ourselves with a bespoke cocktail from the bar. The cocktail my husband requested wasn't available so the bartender came out from behind the bar to where we were waiting to discuss another cocktail option that suited my husband's needs. Impressive. Soon enough, our table was available and the food journey began. When the first dish arrived, my husband's face turned sour because of the size. His first comment, "I knew I should have eaten before we came here." This is a typical comment from my hubby who dislikes any "designer" food because he's always left with a half-full tummy. I told him to be patient. Next came the tuna poke, cod and a number of other dishes and finishing with wagyu fried rice. The tuna was meticulously presented without looking too made up and melted in my mouth. The delicate fish shone through while being enhanced by the subtle accompaniments. All the dishes were presented in a way that was pleasing to the eye, but not too forced or contrived. There was plenty of creativity in presentation and taste, but not too much to where you lose sight of the star of the dish. Midway through I got the shock of my life, hubby said the food was really filling and we may have ordered too much. One of the best dining experiences I've had in Asia and definitely the best restaurant in Manila to date. Chef Bruce Rickett is a star to watch out for.

This tiny (no kidding, small!) restaurant hidden in the back entrance of the RCBC building in the Fort is a gastronomical treat! The genius behind Mecha Uma is their chef, Bruce Rickets. Imagine the worlds of Alice in Wonderland and Avatar on your plate, just everything unimaginable! To much delight all dishes tasted just as good as they looked, super party in my mouth! It took my mom and I months to reserve because we wanted no less than the Omakase table, so do just that! There are no menus when you sit here because you sit and trust Chef Bruce to give you the bests! It's such a wonder how he comes up with these dishes considering he sometimes doesn't know what's coming (fresh from Japan!). Some might find it a little pricey but I think it's well worth what you're getting in return, I had some fresh truffles, wagyu beef, otoro, and even blowfish sperm (i know, right??)!

Got there right around 7:30, snagged a nice window table with morning light pouring in, and dove straight into the spread. They had this killer lineup--garlic rice, longganisa that was juicy and not too sweet, perfectly fluffy scrambled eggs, crispy danggit, and some really good tapa that was tender and full of flavor. The free-flowing coffee kept coming without me even asking, which was clutch. Everything tasted fresh, nothing felt like it was sitting out too long, and the vibe inside is so chill and homey, like you're eating at a friend's place but better. Left feeling full, happy, and already plotting my next visit to try their all-day menu--heard the bibimbap and pancakes are next-level. Solid five stars, hands down.

They have a breakfast buffet every Friday to Sunday which starts at 7 am and ends at 10 am. They don't have a lavish spread of items on the buffet to choose from, but they do have just the right amount of variety to keep your meal from becoming a dull repetition of viands. From my experience, they had breakfast items such as tocino, scrambled eggs, tapa, and fish fillet. They change the choices once in a while, and they have free-flowing coffee as part of the package!! So be early! If you miss the buffet, don't worry! They have lots of a la carte meals that will satisfy you as much as their buffet will.

Cucina offers international flavors that appeal to the local palate. The dishes weren't tweaked to the flavors that we're used to but were handpicked according to the ones that everyone would certainly like and find more than interesting. It's good value for money and well worth the spend for an occasion. Sometimes, they have foie gras as a part of the selection, but I've only seen that happen once. I wish their Filipino station looked more appetizing. Sadly, the dishes appeared dry, like they had been sitting there a while, overlooked by the diners who preferred the pasta, seafood choices, and carving station. I must have had two plates of lobsters when I was last there on a Sunday night, though! I really enjoyed that, plus the service of the accommodating wait staff on duty.

She loved it so much that she brought the family there for Sunday bonding. I found the place to be homey and cozy. It looked like a bricked house and once you've settled in a table, you'd feel like you're really in Spain. The music and ambiance really suite the whole theme. And don't get me started with the food! We ordered different things for the family to try and I must say that the food was good! We ordered the Paella Valenciana which is the flavor/variant we all know of. We also ordered the Caldo Gallego which was a hearty soup composed of beef, chicken, beans, vegetables and Spanish chorizo. We had the Salpicao, Croquetas and Bacalao ala Vizcaina (cod in tomato sauce). All of those dishes were really good! To end the meal, we ordered Sangria and partnered it with Bandeja de Jamon, Chorizo Y Quezo which was a platter of cold cuts, hams and cheese. The restaurant definitely captured the taste of Spain. I found it to be a great place to be with a big group or even just a one on one intimate dinner. The vibe for me was great. My overall experience in Calderon was pleasant! Honestly though we weren't expecting that much since it was only a neighborhood joint and we suspected would not offer Spanish dishes quite as authentic and fresh as those we've had in more expensive restaurants, but boy were we wrong. Calderon is fantastic. Their flavors was bold and their dishes though made with simple ingredients really pack a punch. The place is cozy and warm, the décor classic and earthy. The food offered is classic Spanish and we ordered salpicao, paella, gambas, and croquettas, all staple Spanish food. I was blown away by how tasty and great everything was. The tapas options are killer. I could honestly go home with a pot filled with their salpicao and just gorge on that and rice for a week. The ultimate test (at least for my mom) was their paella and it did not disappoint it was flavorful, salty, packed with meat and veggies. Calderon is certainly a must-try!
