So, finding myself in Raton again, I stopped for an early dinner. Yeah, it's attached to a motel but, again, don't judge.... The inside is bright, clean and simple. The menu has a variety of dishes from traditional Mexican to burgers and chicken fried steak. This time, I chose a Mexican combination plate to include two enchiladas (I chose the "Christmas" red and green sauces), a taco, rice, beans, and a sopapilla. The dish arrived in good time and it was plentiful! The enchiladas were the star with those savory (while not spicy) sauces. The rice and beans were okay. The taco, same. But, the addition of the sopapilla was an added treat; hot, crispy and delicious with added honey. Service is efficient and friendly. Prices are excellent for all you get. I'll be passing through here again in few days - you can bet I'll be stopping.

It seems pretty obvious that they should spend more time in the fryer until they look golden brown! And if it's not obvious, maybe taste one to confirm they are crisp? Their restaurant had pretty good food with local beef .It really has changed basically just another TA They had homemade pies.I'm sure that to do anymore. It was more of a classic truck stop with a diner. They reinvented as a regular TA. The family used to own one off of 40 too. Anyway, everything always changes.Nothing remains the same. This is a gourmet sandwich shop with one of the cleanest kitchens I have seen in years. The food was absolutely delicious. This is not a fast food store even if it has a walk up window. The food is all hand prepared, and the foods have delicious seasonings that are their signature seasonings. The chef is a culinary school graduate with a number of years of experience, but this is his first personally owned business in the food court and he wanted to make it a memorable experience for his customers and he has succeeded. I have attached the menu in the photos section. One of his signature items is his French Onion Soup which was a local favorite and which we wish to try next time. The "Restaurant" is in the Marketplace in Trinidad, Colorado. Because he is in a food court, the menu is limited and now includes mainly soups, salads, and sandwiches and soft drinks. (There are other booths where you can get alcoholic drinks and deserts to go with his dishes) I had Pozole for a starter which was outstanding with just the perfect level of heat. My husband had the coleslaw for his starter which was marvelously crisp and well seasoned. For our main, we both had the special for the day which was a Crab Roll. We used to live on the East Coast and one of our favorite foods was the Lobster Roll and this was right up there with the best we had there. Even the French fries are made from scratch! They offer vegan and gluten free options as well as their standard items. The Twisted Pig is all hand made with locally sourced products from the baked buns for the sandwiches, the meat from Colorado farms, and salad goods from his trusted suppliers all in the US. It is a bit hard to find. When you enter the food court, there are a number of outlets in the main room, nearly all of which rely on frozen foods from national suppliers. The Marketplace is on one of the main streets of a quaint old town. Unfortunately, his booth is not visible from the front door. You have to turn to the left in the first hallway and Twisted Pig is at the end of that corridor. It is popular among the local residents and it is always has a line waiting. Since all foods are hand prepared, it may take 15 minutes or so to get your meal so you can sit at one of the tables in the food court and wait for your buzzer. I highly recommend it.... We travel alot world wide, and we will definitely be making future stops here when we travel to Colorado. By the way, if you haven't visited Trinidad, Colorado, it is well worth a stop to explore this historic town.

I've ever tasted a tad too much dressing. However, the candied bacon is phenomenal and the deep fried peppers on top really gave it a nice twist with fresh blue cheese.
