By the end, pretty much everyone in our group had found a wine they wanted to take home--including the ones who swore they weren't buying anything. Dennis, our Tasting Room Host, made the experience. He was warm, very knowledgeable, and genuinely engaging with everyone--from the serious wine lovers to our six-year-old--while keeping things professional and elevated. The whole visit struck that rare balance: polished without feeling formal, refined without ever feeling rushed or "in-and-out." Dennis has been with Eberle since 2017, and you can feel how much he cares about the place. He spoke about the winery with such genuine pride, and as you look around the tasting room at the rows of award ribbons from years of vintages, it hits you--this is a place with real history behind it. That sense of legacy and care is woven into the whole experience. The historic wine caves are a must, the complimentary tasting felt generous and unhurried, and the grounds have that unmistakable Paso magic--rolling hills, big oaks, golden light, and room to breathe. We even crossed paths with Gary Eberle (founder, 1979) and his sweet black poodle, Vieto--one of those authentic, only-in-wine-country moments that sums up the welcoming spirit here. McLintock's down stairs the ability to have a meal catered is easy, and with the kitchen area in the back, other caterers can do good as well. Being on the second floor with the small elevator is a bit of a traffic jam, and parking in downtown Paso around the area can be tight, however it is well worth it. The stage at one end of the room works good for entertainment of that head table so book it I say. I have been to Christmas parties, and a wedding here and it has worked well for every event.

It seems like the concert space is normally an animal space, as it's all dirt. They actually allow you to book seats that are directly next to the stage, but not facing the stage. I was really disappointed. We ended up finding seats in a different section to sit in. The event itself was great, but the concert set-up could be improved for sure.

Everyone got the chance to hold each bird with a gloved hand. We met Bug, the calm and irresistibly cute mini owl; Jack, the Eurasian Eagle Owl, surprisingly heavy and full of personality (though not thrilled about being passed back to his handler); Goose, the chatty falcon who was charming but preferred not to be touched; and Ranger, the hawk, who stole the show. We loved sending Ranger out and calling him back with a treat--though he did swoop down and land on my head once (thankfully, I had a hat on!). After all the bird encounters, we wrapped up with a wine tasting at Via Vega Winery. It was the perfect way to end a unique, unforgettable experience.
