    We purchased a half hog from Wild Edge Farm and they contract with Sunrise Meats for…read moreprocessing/butchering. I stopped in to talk with someone about how this works and the staff member was very helpful and patient as we had not done this before. He went over a checklist of how we wanted parts cut (chops, package weight, etc.). Three weeks later, we are stocked with all things pork! Packages are clearly marked with contents and packaged so they can go right into the freezer as is. It was a very easy and smooth process from start to end. The facility is all business--refrigerators with many choices of various smoked meats and an open butchering (?) section that can accommodate lots of staff to do what they do and a small office. We didn't buy any of the smoked meats when we picked up the pork, but my husband went back to buy some landjaeger out of curiosity. It was delicious! Not sure how to describe it--a toothy, meaty better than your usual beef /pork jerky. So, we went back another day and spent way too much on smoked salmon, teriyaki pepperoni sticks and many, many more packages of landjaeger. I really enjoyed the white salmon because it was less salmon-y/fishy (I'm not a huge salmon fan); husband preferred the red King. The teriyaki pepperoni are way too easy to eat and are not overly sweet. It's more like essence of teriyaki which I very much enjoy. I can't wait to try more of their products!
