He suggested 3 dim sum items - one was "crispy dumplings". I said, not deep fried?? He said no - in a pan. Guess what. 4 Deep fried. He also recommended the "cheeseburger wontons" which I questioned as it was on top of 2 other things and I wanted to eat light. Yea, well - got 4 big deep fried cheeseburger wontons. Ugh. I ate 2 the lettuce wraps and had 1 each of the other things and bagged to others for the hotel - but they went in the trash. Sorry... can't recommend.

The yum cha is tasty but can get a little pricey. Overall some pretty good dishes. When I went for dinner, we ordered the peking duck, which I thought was pretty tasty but my cousin said it wasn't presented properly - with one slice of cucumber and no green onion, and too much hoison sauce. The lettuce wraps were a bit salty and didn't have the traditional water chestnuts. The seafood chow mein was good, the veggies were a bit bland. Overall it was a decent dinner, but nothing spectacular. One exciting thing was that the bathroom had toilet seat covers!! It's probably more exciting for me as an American living in Sydney and missing toilet seat covers.

The food was always good, especially the weekend Yum Cha. It just seems to be a lot more efficient. I've never been to YumCha (Dim Sum) and had one of the cart pushing "aunties" ask from across the restaurant whether I wanted more. Usually they glide on past and leave you hungry. Imperial Signature is really worth the effort if you're into Yum Cha. It's best after 11am when the carts are full and the kitchen is heaving.

The food is not too bad evidenced by the loads of Chinese and Australians the go in and out its doors of a lunchtime. Yum Cha by day and a la carte Chinese restaurant by night this restaurant offers marginally better service with staff slightly less rude than those you will encounter at various yum cha in Chinatown. The prawn dumplings (Har Chao) steamed are a yum cha must but these are too garlicky for my liking and I love garlic. All their dumplings of variation include; spinach and prawn, snow pea and prawn, vegetarian, seafood combinations etc are like deadly garlic bombs. Steer clear if you intend on going to a meeting after lunch or want to steal a kiss. However the soy noodles, salt and deep fried pepper calamari, roasted duck, rice noodles with BBQ pork or prawns and prawn toasts are quite delicious. It is all standard yum cha fare but its good yum cha and reasonably priced. As it's such a large space you won't need to queue to get a table and even if you have to wait there are plenty of seafood shops below as well as a grocer and speciality deli. Well worth your curiousity and you bookings can be taken online.
