I am giving it a 2 star, because there was large chunks of lobster meat, but that is the only thing that was good. We tried them at Mountain Cowboy, LOVE the drinks and atmosphere of this local hangout...but sadly, haven't loved any of the food trucks we have tried. This was a last minute, let's go try it before they closed for a special event. I had the lobster roll plate, my husband the brat. First it was very disappointing to see hardly any food for what we just paid. Barely 3 bites of coleslaw, it was good, but hardly got any. Dill spears were limp and almost mushy, and a bag of chips. The lobster roll was cold, like VERY. Maybe it was supposed to be cold, I have had a roll from another truck it was not cold. I think room temp would have been ok, but it was a shock to bite into something that cold. Like I said, large chunks of meat, but overall such a small roll that tasted ok. While my husband said the brat was good, again, just so sadly small and IMO grossly under portioned, especially when I think of what we could have had elsewhere for the about same amount of money. I was not looking for plates piled high with food, but at least had a decent amount, again...for the price, $22 was rather steep for what did end up on the plate. read more

Dill's Maine Lobster Schack is absolutely phenomenal!! The lobster and crab rolls are always fresh and the bread is perfectly toasted. I've eaten at the Lobster Shack about 5 times now and I've never been disappointed. Huge amounts of crab and lobster on the Ballers roll and cooked perfectly. They are definitely worth seeking out!! They were outside Verboten pub in Loveland on Sunday and we were really up for some great seafood. We have been to Maine many times for vacation and the lobster is one the reasons. The lobster roll at Dill's checked all the boxes; mostly claw meat, very fresh tasting, traditional east coast bun, beautiful to look at and enough lobster meat to feel the price was very fair. Getting a delicious and fresh Lobster roll in a land locked state is not an easy feat. Unless you happen to find Dill's Main Lobster shack at a local brewery or food truck rally. This seafood is fresh and swimming just a couple days before they kiss it with some light dressing and lemon and then place a 1/4lb in a perfectly toasted roll. So good, so fresh! I got the Baller Mac n Cheese today. I was disappointed in the flavor of it, only great flavor was the lobster n crab. I pretty much picked off both of them but left a lot of Mac n cheese in the plate to throw away. I hate to write bad reviews but for $30 (cost+tip) I could have went somewhere else for a bite. What can I say, other then , the Lobster Roll was simply delicious. Loaded with top quality Lobsta......moist and tender. You could taste the Atlantic Ocean in every bite. Lucky us here in Colorado, that Ryan and Liz Dill are serving us .There may be others, but none can compare to Dill;s, you can tell Ryan still has connections to his Maine roots and gets only the finest Lobsta Meat.
