I order my pizza with thin crust and they don't have a problem making that for me. If I'm eating it there I order it well done and if I'm taking it home I do not because I like to reheat it and I think it's actually the best reheated at home because it gets even crispier. This style of pizza dough has a very long fermentation period which gives it a particular flavor that I like, and it has much less water than normal pizza dough and is rolled through a sheeter which pushes the air out of the dough and makes it crispy cracker style.
