Beautifully situated among the vines of the Vallée du Lot, Le Callau is artfully considered, with seating under the trees or in a re-purposed barn or recently completed dining room/bar area. Chaz, his wife and their team take great pride in their 'farm to table' philosophy. Each server is well versed in the gustatory selections of the moment, and service is always warm and welcoming. Children of all ages find the interior courtyard interesting to explore, with its fountain and ever-inviting weeping willow tree. A walk along the country lane after an interesting, satisfying meal, prepare one for after dinner desserts and/or drinks. "Casual and VERY classy" is how the experience is best described. For example, I arrived with 3 elderly guests, all with some mobility issues, and Chaz immediately brought out padded chairs from the dining room as he recognized that old bodies would have a difficult time sitting for any length of time on the typical 'minimalist' patio chairs that are usually found outdoors. (We were in for a 3-hr lunch, so this was a great idea)!! Le Caillau is a 300-year-old wine domaine, and the complex includes a luxury 2-bedroom suite, including private swimming pool and garden. (NOTE: We have dine there many times, but never stayed overnight, so cannot speak to the accommodations, other than saying EVERYTHING is tastefully decorated and service at all levels is impeccable). Reservations are a must, but, in order to enjoy the experience fully, come when not pressed for time. This is a place to relax, enjoy and experiment with new epicurean delights! She cannot handle too much food at all, one stater is already pushing her limit. My three year old is hard to guess, wether he's going to eat much or not that meal. So I could only order so much in the beginning and add more later on. This has been a constant problem in many French restaurants. However, to my surprise the beautiful waitress here had no problem with that at all! And was always serving is with a hearty smile! I was very happy with the food and the service! The food, by the way, cannot be complained! Even the child' s menu provides the yummiest chicken breast with cream sauce and half French fries and half portion vegetables of the day. To my surprise, my son nearly finished all his food! Even the veggies!!! He loved it!! I strongly recommend you to give this place a try! The only down side that I could think of is that the oysters are a bit smaller than other restaurants, but this we knew from the beginning. It was marked No. 4 in the menu. For oyster lovers might be a little disappointing, but hey, the flavor is still really good.

Wish I had a restaurant like this in San Francisco where I'm from. We actually ate here 2 times in our short 1 day and 1 night here lol. It was just easier from a dashing between wine tasting to wine tasting perspective. But I truly loved this place and didn't mind returning anyway! For lunch, they had some special prix fixe menu where you can choose a starter, entree, and dessert. I chose the Asparagus Mousseline Sauce, Basquaise chicken, and chocolate cake. The white asparagus was so beautiful and delicious. The basquaise chicken was this very homey dish....so satisfying and just hit the spot, with rice that soaked up the sauce. WOW!!! I want to try and recreate this dish at home. The chocolate cake I had for dessert was just okay, no big deal. The dinner was also a set menu, that had come with my hotel reservation (some package with Chateau Cordeillan-Bages). It was similar to the lunch, but different items to choose from. I ended up getting the Salmon Gravlax starter. Wow...this was a treat. The salmon was so silky and melt in your mouth!!! For my entree, I got the Lined Hake with seasoned veggies. The fish was cooked so perfectly, very juicy! My husband got the Foie Gras Terrine for his appetizer, another wow. We've gotten this in the past from other places, but this one was quite amazing, especially not having eaten it for a while!! He also got the Beef Undercut with mashed potatoes for his entree, which he loved. My dessert was "wine strawberries" which sounds weird - it literally was wine and strawberries, but it tasted great. The strawberries were perfectly ripe, and it somehow went with the wine. My husband got some lava chocolate cake, and it was too sweet. Every single savory item here was a huge hit, and beautiful presentation too. I really wish I could have eaten here another 2 times to try everything on the menu!!! Fun setting too. At lunch, we sat inside in their dining room, which had a cute bustling bistro feel. At dinner, everyone sat outside on the patio, enjoying the warm weather and sunset. Lovely! Would highly recommend this for your stay in Pauillac!
