Gathered around the Forged Charcoal Grill, sipping wine at sunset and enjoying one another's company--there is no better way to show them what they mean to you than a nice dinner. The shop was amazingly clean and offered not only Piedmontese Beef, but organic chicken, duck, and Easter Ham. My girlfriend and I went a little "nutzo koo koo" and picked up steaks, hamburgers, Bacon Fig Kabobs, hand-made sausage, and dried Morel mushrooms. There is even a great selection of seasonings and a dedicated cheese refrigerator to round out the meal. To clear up some confusion from other reviews: this is a legitimate butcher shop, not a restaurant! We watched the butcher bringing out fresh hand-cut steaks, bone-in ribeyes, and even a massive Tomahawk. They also have fresh, never-frozen prepared hamburger patties ready to go. We definitely splurged, and even though we live 2 hours away in Phoenix, the helpful store manager--a friendly Viking with an amazing red beard--gave us an ice pack to keep our provisions perfectly refrigerated for the trek home. Go ahead and brag about these cuts; they deserve every bit!

We ordered in advance a 17 lb. 7 bone prime rib for a holiday meal for 14 people. It was more than sufficient, and we sent leftovers home with folks afterward. The meat was from a special 'Piedmontese' Italian cow grass fed on a Nebraska ranch. We picked up the order right as designated, and the staff was professional and delightful. The cut of meat was absolutely beautiful and slow cooked so easily. There was a bit of unexpected fat, but nothing too out of line with quality, and it was delicious. Everyone loved it As would be expected, it was outrageously expensive but worth the quality. The value was definitely in it. Several relatives in the area didn't know this place and determined to buy meat from here now, as the supermarket quality is nowhere near what these folks provide.

WARNING: Arizona Grass Fed Beef defrauds the public with poor quality, gristle-laden, inedible beef…read morewhile falsely marketing it as "premium". Read their reviews before you make the mistake of buying their meat. 2.2 out of 10 reviews on Yelp Arizona Grass Fed Beef advertises on their website that they sell "THE FINEST FREE RANGE GRASS FED BEEF ARIZONA HAS TO OFFER". THEY CLAIM IT IS "PASTURE RAISED, HAND CUT, PREMIUM QUALITY" I purchased 9 pounds of meat from them on the internet which was sight unseen and I had to prepay for it. They arranged for me to pick up my order at their sister store, Arcadia Meat Market which is owned by the same owners. The meat they sold me was so horrible I had no choice but to throw it away. It was tough and unchewable. The presence of excessive gristle and unchewable chunks in grass-fed ground beef is a strong indicator of low-quality meat sourcing, improper processing, and/or the use of older, tougher animals, culled breeding stock that have lived beyond their productive years and develop dense connective tissue due to age and muscle fatigue [B-6][A-7]. Consuming low grade, gristle-heavy meat is not just unpleasant it poses serious health risks leading to gut discomfort, bloating, and constipation. While gristle itself isn't harmful, its presence signals lower nutritional quality and potential digestive issues. Tough connective tissue is high in collagen but low in bioavailable nutrients like iron, zinc, and B vitamins compared to tender muscle meat. Gristle is largely indigestible due to its dense elastin and collagen content, which resist breakdown by stomach acids. This can cause discomfort, especially for those with sensitive digestion [A-1] [S-4]. Poor Butchering Practices: Inadequate trimming of sinew and silver skin before grinding can leave behind chewy, indigestible tissue. [S-1][A-3]. Arizona Grass Fed Beef advertises on their website that they are certified by the American Grassfed Association (AGA), one of the few legitimate grass-fed labels [B-6]. I looked up the American Grassfed Association and Arizona Grass Fed Beef is not a member. See attached label with no AGA certification. Misleading Labels: Terms like "grass-fed" and "natural" are unregulated, enabling companies to slap fraudulent claims on their meat [A-10]. High-quality ground beef should be fine-textured, slightly sticky, and free of visible white chunks (gristle). I have attached pictures of the ground beef I received which shows extensive gristle chunks throughout the meat. I tried contacting Arizona Grass Fed Beef after I received my order. Their website's return policy states: "We take pride in producing and delivering the best 100% grass fed & 100% grass finished beef products. If you are not satisfied with your product in anyway, please call our customer service. I called them, but they do not answer their phone. I left messages and never received a call back. I call Arcadia Meat Market where I picked up my order and I was told by their employee that they would contact the owners for me. I never heard back from Arcadia Meats nor Arizona Grass Fed Beef. We popped in on a Monday morning hoping to score some great grub and we certainly found some! Cubano ($20.95) - Starting with the bread - it's really fluffy, not toasted or pressed as with usual cubanos. Unfortunately, it's probably a little too light for the sandwich because some parts get mushy from being soaked in all the dijonnaise. The dijonnaise is very sweet, creamy with a mustardy zing. I think they add a bit too much, making the sandwich more fatty and messy to eat than I like (not to mention what I stated before about it soaking into the bread). The meat is fantastic. Both porchetta and ham are griddled on the flat top, giving them a developed and concentrated edge. The ham is to the point of being like country ham, while the porchetta still has great seasoned porky flavor. I believe they griddle the swiss cheese alongside the meat. It melts and crisps up into a cheese skirt, adding a fantastic texture to the sandwich. There's a lot of crinkle cut pickles underneath the meat, but it's not enough acid to cut through all that fat. Sandwiches come with a side of house chips. They are fried until a darker golden brown color, but aren't burnt. This gives a great kettle chip-like crunch. Even with different sized chips, they are very evenly fried with all chips being the same texture. They are salted the perfect amount. (4/5) Aleppo Pepper Pastrami sub Tomato Soup ($22.75) - This place is famous for their pastrami, and I can tell the quality. It's cooked on the griddle until it develops crisp edges. It's fatty, but the fat is rendered so there are no chewy and leathery parts. The meat is extremely tender and thinly sliced. It's honestly almost like bacon in texture, but the taste is completely different, with the exterior spices and pepper making a huge impact along with the rich concentrated meatiness inside. The bread is a nice toasted sourdough, not strongly sour in flavor, but definitely noticeable. The bottom slice is slathered with plenty of nopales studded cream cheese. It's added in a large amount and is an extremely creamy and fatty substance yet somehow doesn't overwhelm the sandwich. It's warm but not melty. The nopales are clearly there but I didn't find it to contribute much. The pastrami is layered on top of that followed by a ton of sweet brown caramelized onions that are very tender. An entire green chile, roasted and super smoky, is above that. Finally, aleppo mustard is spread on the top slice of bread. Between the green chile and the aleppo, there's a slight warmth that tinges the sandwich. It's nothing too spicy. Instead of chips, we opted to sub the Tomato Soup (no fee). It's very homestyle, full of tomato richness in a thick blend. It has a strong tangy tomato essence. There's basil oil drizzled on top for a boost of freshness. The soup is unfortunately quite a bit too acidic for my tastes, but that's only by itself! While very acidic, the soup is actually great as a balance to the sandwich (along with the pickle of course) since there's so much richness and fat coming in between the bread. (5/5) Proper Meats + Provisions definitely serves some great sandwiches. We were considering visiting again for our 2 full days in Flagstaff, but weren't able to make it because they close so early at 6! They served some alcohol. You have to buy it, of course. The entertainment was funny and great. Loved all the songs they sang. Dinner started at 7pm. Entry to dinner started at 6:30pm. All the young servers were great. They were busy and helpful. They had animals, birds, mini golf, this 4 table ping pong table, escape room, axe throwing, old photo shoot ($15pp), mini museum, big chess game, connect 4, etc. But we didn't get to enjoy all the games because we accidentally took the long way to get to Blazin' M Ranch. A few extra fun touches before the dinner show:: a mini rail ride around the property and hanging out with the petting zoo animals. We paid for our old west portraits to get taken and at $40 for a couple to try on the costumes and make it happen was fun. As far as the petting zoo, bring some fresh produce in your pockets for the goats and the absolutely charming mini horse Gucci. He steals the petting zoo show. The dinner: soooo much great BBQ and dessert. We had delicious smoked chicken and pulled pork. Sides of Mac and cheese, homemade slaw, honey glazed corn bread, homemade mashed potatoes and the award winning grandmas apple cinnamon powdered cake. They encourage you to grab seconds. We couldn't even finish our firsts. Ok the show: it was outright hilarious. The owners and hired gun Eric Wildman Williams absolutely put on the next comedy and music infused hour show. You won't want that to ever end. I cannot say this enough: it was well worth the VIP package price we paid. If 10/5 stars were available, that's what they would get.
