The two had worked as butchers when they first immigrated to New Haven. When they heard that a local sausage company named Phil's Sausage Kitchen on Congress Avenue was going bankrupt, the brothers borrowed $1,000 to purchase the location. The Hummel Brothers had both trained as 'wurstmachers' (sausage makers) in Germany and wanted to make the finest products available to local consumers. Thus 'Hummel's Premium Quality Provisions' was born, and it didn't take long for the company to become a household name. They moved to their current larger location in the 1970s. Today the company is run by their grandchildren. The company's best-selling product has always been their hotdogs. Hummel Brothers were one of the first sausage companies to stop using red dye and make hotdogs with their natural color. Varieties they make include Natural Casing Frankfurters, Skinless Frankfurters, All-Beef Frankfurters, Red Hots and Cocktail Franks.
