They do it at the Shop…read moreand they provided great Snacks: Sandwiches (Featuring Bread from Fatto a Mano), Sliced Meat, Cheese and a selection of Beer. They provide a fresh cut steak cooked on-site to enjoy as well and at the end you slice your own steak to take home with instructions on how to best cook it. The class is designed as Close up Observation and Explanation. Nick walks you through the entire process from the cooler, tools and breakdown of 1/2 of the main trunk of the Animal. He covered all aspects of cuts, anatomy, how and why they part it out the way they do, what to look (and watch out for) as he is doing the knifework. Nick also does it in a way that makes it engaging, understandable and answered all of the many questions I had along the way. One Note: If you are squeamish, remember you are seeing up-close knifework and the physical manipulation of real physical structures and their parts being broken down. For me I came away with a whole lot of knowledge that hits different than you will see in an Online Video or book. It also gave me a deep appreciation of the reality and skill involved to create what we end up enjoying on our table. Nick was a fantastic instructor and all-around great guy. For those with an interest in learning more about meat in general I highly recommend the class. It was a great time from start to finish. 2 BIG Thumbs Up!

Longhini Sausage Company is an artisanal Italian sausage company that opened in New Haven,…read moreConnecticut in 1950. It was founded by Vito Longhini: an immigrant from Fano, Italy. Vito spent his childhood learning the craft of sausage-making from his father. He brought those old world skills with him to New Haven and soon started his own business. Vito always made his sausages with locally-sourced all-natural ingredients. Vito's son Richard Longhini Sr. later took over the business. After he passed away in 1996, his son Richard Jr. took over. He still serves as the company's president to this day. His uncle Mike Baldo serves as the production manager. Today, Longhini products can be found at well over 100 supermarkets, pizzerias, Italian restaurants, and delis throughout Connecticut as well as in New York. I've been purchasing Longhini sausages for several years. They are great for making sausage & pepper grinders, stuffed breads, stuffed peppers, pizza, pasta dishes, etc. Longhini Sausage had a retail store & deli at their production plant for several years, but they recently closed it permanently due to COVID-19 concerns. Their products are still widely available at area supermarkets. Their traditional Italian sausage links come in Sweet Italian Pork, Hot Italian Pork, Parmesan Cheese & Parsley Pork, Sweet Italian Chicken, Organic Sweet Italian Pork, and Organic Hot Italian Pork varieties. They also make sausage patties that are available in Sweet Italian Pork, Hot Italian Pork, Sweet Italian Chicken, and Buffalo Style Chicken (with Blue Cheese) varieties. In addition to their sausages, Longhini also make a delicious Porchetta. The latter is a favorite of mine; I won't buy anyone else's Porchetta.

Lamberti Italian Sausage is an artisanal Italian sausage company that opened in New Haven,…read moreConnecticut in 1946. It was founded by husband and wife James and Eugenia "Jean" Lamberti. James spent much of his childhood working in his family's New Haven grocery market. After noticing how popular his family's Italian sausage recipe was, he decided to start his own business that focused solely on Italian sausages. When the Lambertis first started the business on Grand Avenue (initially called the Lamberti Packing Company), their clientele were local mom-and-pop establishments and pizzerias. Business struggled at first, but eventually it took off. Lamberti would later expand their clientele to 100 supermarkets throughout Connecticut, as well as Italian restaurants, colleges & universities, and even state fairs. In 1964, Lamberti Sausage was one of the first businesses to move in at the Long Wharf food terminal (a meat-packing and produce hub); other food businesses soon followed. James Lamberti passed away in 1994 and Jean would follow him in 2020. Their legacy lives on through their family. Daughter Cindy Lamberti-Pallotti serves as the secretary and treasurer, grandson Joseph James "Jay" Pallotti serves as president and director of sales, and nephew Joe Kelley serves as operations manager. I've been purchasing Lamberti sausages for several years. They are great for making sausage & pepper grinders, stuffed breads, pizza, pasta dishes, breakfast dishes, etc. Unfortunately, Lamberti Sausage doesn't have a retail store at their home base, but their products are widely available at supermarkets around Connecticut. Their traditional Italian sausage links come in Sweet Italian Pork, Hot Italian Pork, Italian Chicken, and Breakfast varieties. Lamberti also make sausage patties. In fact, they claim to have formulated the first sausage patties.

They sell great 5 pound boxes of sweat or hot sausages that grill up perfectly. They are surprisingly lean with very little fat rendered which is surprising considering how much flavor is packed in. As such, pan frying needs a touch of oil but not much and nothing too strong as you shouldn't mess with these sausages. A really unique flavor compared to sausages from NY and shouldn't even be compared to most supermarket and deli versions. I am very happy I found this place.
