First of all the place is stunning, old school Spanish decor but beautiful nonetheless. I wasn't really hungry but the pictures on google looked too good to pass up. Upon sitting down I was presented with a few plates of tapas, some almonds, potato chips and sausages. Of course it's a steakhouse but I went for the tuna loin with plum sauce. Divine. It also came with a large plate of fries. At the end of the meal I was given a bottle of Pedro Ximenez and some Toblerone. Would actually come back to Madrid just for that meal. Loved the service as well, I couldn't even pour myself a glass of water without someone rushing over to handle it for me. Really impeccable from start to finish.

When I found out I was coming to Madrid I had to book a table. First things first, my suggestion is book way in advance. This place fills up fast. My friend and I waited too long and the only seating we could get was at 11:15 PM. No big deal though there's plenty of places you can get a light snack in the surrounding area while exploring the city. Walking in, the architecture immediately hits you. Low ceilings, gorgeous old brick, tight dining rooms, it really feels like you stepped back in time. The whole atmosphere is elevated without being stiff. Staff was super friendly and made the experience feel smooth from start to finish. There's also apprently a really nice wine cellar at the bottom I overheard other patrons bragging about. Food wise, I will keep it real, it was good, just not my favorite meal in Madrid. The sangria was solid, definitely one of my highlights. The croquettes were fire. Crispy, creamy, exactly what you want. My friend's seafood casserole was actually really good too, I lowkey wish I went that route. Now the misses. The sautéed vegetables with Iberian ham didn't do it for me. The veggies needed seasoning bad, and the ham leaned a little too salty, so together it just felt off. The suckling pig, the signature dish, was good, but I was not blown away. If I find myself returning here, I would explore other options. After dinner, there was a little show and they let you keep a souvenir menu, which was a nice touch and made the night feel more memorable. Overall I had a solid 3.5 star experience rounded up to 4. Sobrino de Botín is history, it is iconic, and it is worth saying you have been. Just do not expect it to be the best meal of your trip. Hit Botín, soak it in, then go explore the rest of Madrid's food scene, because that is where things really start to shine.

History aside, the food was underwhelming. It's the type of place you try once when visiting Madrid.

We arrived early (8:30) and had the place mostly to ourselves. The cold bar is delicious, with lots of choices of salads, fruits, olives, all kinds of good stuff. But don't fill up there (unless you're a vegetarian) because MEAT is the word here! (OK, actually, it's carne, but you get the idea.) Everything we had from the chefs was delicious. Black sausage, Argentinian sausage, steak, chicken wrapped in bacon, even the grilled veggies were amazing. The prix fix is very reasonable. My only complaint was that we didn't know we could order tinto verano instead of bottled wine. That would have been better (the wine was good, but it was hot, and we could have used something lighter.) But I won't take points for that. All told, the Knife was perfect! 5 smokey grilled stars!

The squid was also very good, but the standout dish was the asparagus in tempura with almond mayonnaise. Perfectly fried and incredibly light, it was absolutely outstanding. Although we were ushered to the corner of an empty dining room, I could tell the diner's atmosphere was sophisticated but laid-back. Our server was pleasant, patient, and eager to flex his English skills. To whet our appetites, we began with an off-menu salad (waiter recommended) that came with a lump of mouth-watering smoked goat cheese and a some type of crunchy worm-like fish. Looked a little strange, but tasted quite good. We then moved on to shrimp, chicken, and beef croquettes (little fritters), which were playfully arranged on the branches of a miniature tree constructed from coiled wire. The outsides were thin and crispy, with gooey centers infused with notes of rosemary. For our main courses, we ordered two paella platters: one Mixta and one Negra. Now that's more like it. THIS-- generous helpings of colorful cooked rice bursting with meaty toppings and rich flavors-- is exactly how I envisioned the renowned Spanish staple. The Paella Mixta was buttery and smooth, with a combination of shrimp and chicken. The rice was actually the best part and paired nicely with the lemon. The star of the meal, however, was the Paella Negra, white rice doused with squid ink and cooked in a seafood broth with assorted sea critters. As a rabid seafood-lover, this pitch-black preparation blew me away with its savory taste and perfectly cooked calamari and shell-on prawns. This place has gotten mixed reviews elsewhere on the internet, but I have nothing but positive things to say about our experience.
