Highly recommend the chicken enchilada rojas.

You need to be careful with reading reviews. Everyone comes at them with different contexts. Most compare the {fill in the category} to the best they have encountered. Others, like me, rate them like the Westminster Dog Show: how does this Great Dane compare to others? How does this Bulldog compare? Only the finalist is compared across breeds. So if you are like my sons from Texas and compare it to the awesome Tex Mex near the border, you will be disappointed. But, I was raised in these mountains and compared to my expectations of an east Tennessee taqueria - it was wonderful. It exceeded my expectations of a quick taco joint in the foothills of the Appalachians. We were driving thru to visit relatives in Virginia and arrived just about closing. Which happened to be 7:30. They were gracious enough to sit us down and serve us even though I'm sure they wanted to go home. The chips were solid and the salsa was not spicy at all. I'm sure they target for their audience. I recommend using ketchup if you want something spicier. I went with the Chicken enchilada rojas. Basically, chicken in a red sauce. I was pleasantly surprised with the flavorful chicken. They REALLY did a good job there. The beans and rice were solid and could stand their ground most anywhere. If you want good tex-mex in the area, you won't go wrong stopping at La Lajita. NOTE: My son is much better at Spanish than me. He said that lajita means "little flat rocks". It's used descriptively for the limestone formations on the sides of mountains. Very apt name for the mountainous areas. From now on I'm going to refer to the exposed stone mountainsides as lajitas.

Doesn't look like much on the outside but its definitely worth the stop. Delicious authentic Mexican dishes!

Who'd have thought that some deliciously authentic Mexican food could be found in little old White Pine, TN? I had the fried fish. It was delish!

We started to leave when we sat down just because their Google page says they have good cocktails and they don't even have a liquor license. Then the chips they brought to the table were bland and actually chewy. Asked for more, the next batch was at least not stale. But still bland. We ordered cheese dip but didn't get it until after we got the food and asked about the dip. The food: I've never eaten bland Mexican but now I have. Do not recommend. I got their version of ACP because generally that's hard to mess up. The rice was bland. There is no other word. It was like there was no seasoning at all. The chicken seemed like it was a chicken breast they chopped up after cooking it and had zero seasoning. The cheese sauce under it was super salty. Almost like season all level salty. The refried beans tasted like canned beans that had been puréed but not seasoned. Service: the waitress who took our order brought our drinks and brought the cheese dip after we asked. That's the only time we saw her. No refills, no check up, no ticket. We had to tell the guy at the register we didn't have one because we hadn't seen our waitress since coming in. He didn't even ask how the food was, just took our money and said thank you. Don't waste your money or time.

There's only one person in there that I think can legally pour liquor. It wasn't the greatest, so I ordered a Paloma, well actually quite a few. I kind of felt uneasy when he put grapefruit soda into the mixing tin and shook it. But they were pretty good anyways. They had ABC News on the TV. But luckily they were playing mariachi music, so I didn't have to sit there and listen to a bunch of fake journalists continue to spread propaganda and make believers out of the mindless sheep, but to me that's an indication of their values. Inside decorum was nice. Sort of like a Caribbean / Mexican restaurant theme, at least to me. I grew up in San diego, I've been to Tijuana hundreds of times, and actually lived in rosarito so I know Mexican food and everything Mexican. All the wait staff were super nice. The guy at the front of the house who was also the bartender was super cool. My waitress was nice also. He always kept coming back to check on me which was nice. I ordered the Cancun fajita taco salad. It wasn't as big as I was expecting, and they served it without any dressing, so I just asked for salsa. I knew that wouldn't get me through the night, so I ordered the caldo de mariscos, or siete mares as I know it. Now, for being Middle Tennessee and not coastal, it was really damn good. I had a ton of shrimp, a good amount of the other seafood, and I was quite surprised that the crab was cooked perfectly. Not soggy like other places, it was actually crisp and snappy. The head on shrimp were tender enough to eat with the shell on. The broth was pretty good. I'm stuck down here until tomorrow afternoon, so there's a good chance I may go have breakfast in the morning. If I do, another review is sure to follow!
