It was pretty simple and didn't contain potatoes and green beans like some Nicoise salads do; I usually dislike the potatoes and prefer to eat my salad with lots of baguette, which was provided with this salad! Some restaurants in the States like to use thick dressings on their "Nicoise salads", and it doesn't go well with the ingredients, here they used a very simple and classic mix of olive oil and just a touch of vinegar. The owners of the restaurant clearly care about food and the enjoyment of their guests. The husband is the chef and the wife runs the 'front of house'. After ordering an amuse bouche of salmon terrine was delivered which was a small yet perfect delight. My first course was a house prepared foie gras terrine with a fruit chutney. Superb!
