Started by Chef Sergi Arola, a disciple of Ferran Adria, the torch has been passed on to Chef Angel Palacios, who also under Adria and Martin Berasategui, is shaping La Broche's current vision.
The restaurant is located in the Hotel Occidental Miguel Angel, a very hip and stylish structure where it seems the beautiful folks of Madrid come to dine. In fact perhaps the most stunning woman iI saw in all of Spain was dining right next to me during my last dinner in Madrid.
Bringing the influences of Madrid, Catalonia, and the Basque country, we wanted to see what the cutting edge of Madrid cuisine was going to be like and dearly wanted the Gran Menu Festival. Unfortunately due to the dietary restrictions, we settled for the Degustacion instead:

-fish and chips
-caprese salad
-celery with blue cheese and nuts
-beet, raspberry and pistachio
*tapas
-Boqueron en Equilibrio
-Ajoblanco - spherification of grapes,garlic soup
*entrees
-monkfish with peas
-mullet with cauliflower and Idiazabal cheese
-deer tenderloin stuffed with pears.
*dessert
-doughnut with chocolate frosting honey and rosemary sorbet.
-3 bananas, 3 chocolates
The food was delicious. The space is stark white. The service a bit stuffy. I really liked the meal overall but all the warmth that we'd gathered at pretty much every other restaurant in Spain, this one was cold in contrast and it started with the fact that they didn't seem all that interested in answering questions upon our curiosity. They were there to serve your meal and that seemed to be it. I definitely recommend going for the food but expect the ambiance and service to be stark. 4.25 stars read more
