In a nutshell, we would buy again. I can get American raised lamb from my market but it's not always good. It gets gamey. And I'm really not that into the New Zealand lamb. Our leg of lamb arrived frozen solid. I thawed it in the fridge. (Ok, sometimes, I'd take it out to let it thaw on the counter but we were in the low 60s temp wise) It was an easy roast to make and everyone just scarfed it down at Easter. I have some lamb chops in the freezer that I'm going to thaw next week. I can't wait. On to the bison. Hubby was getting bored of beef. Even grass fed beef. Enter the beloved Bison. The flavor is a bit sweeter and is very delicious. I followed the directions and prepared the steaks simply and cooked them in my cast iron pan over medium heat. They were tender and just a joy to eat. Remember that things only get shipped out Monday and Tuesday. Everything is frozen solid. So you will need to leave time for thawing. Plan ahead for that special meal. I've got to get my next order in. We're definitely converts for bison. And now I know where to get good lamb. Next up, wild boar and Elk!

Living on a farm, my parents would often buy a 1/4 cow when a neighbor was ready to butcher, guaranteeing we had very fresh beef, that wasn't injected with or fed chemicals. I ordered an 1/8 of a steer and it fits perfectly in my 3.5 Cu. Ft. Freezer. I got a great selection of steaks, stew meat, roasts, and ground beef. At no additional cost, I also received organ meats and bones (for my dogs) and those can cost a fortune at the butcher shop! The taste is simply delicious!!! The hamburger does not have that odd pink slime that comes off of grocery store ground beef. I expected it might be fatty... but it is not!! Ive enjoyed soups, spaghetti sauce, stew and a filet steak so far, and though my freezer is still full, I want to order more!!! Civil Sass Beef has been an absolute delight. I barely want to write a review to keep it more of a secret! From ordering, to selecting cuts, to pick up... everything has been better than I expected... even the prices! I will not be going back to grocery store beef again!

The staff located in the patch and shop are nice but everything in there is overly priced and most of it mass produced outside of their location (i.e. the stuffed animals). Of what we bought - some apple cider donuts and pumpkins, the donuts did NOT disappoint, they were fantastic even if they started going stale only about 2 days later. The other problem, also an issue of longevity, is that the pumpkins were rotting within 3 days.
