Ground meat is mixed and blended amazing but their jerkey is the best I've ever had! Good smoke flavor and seasoning, tender as all get up! 100% will be using them from now on! Only down fall is the guys ass crack hanging out when you walk in up front and there is so many people in there you don't know who is working!

I figured that this was a good a place as any to ask, because meat heads in these towns usually stick together. Located just a few blocks north in an unassuming building on the main strip going through town, I found it curious that a meat market this small could be a going concern. We parked and walked to the door. As we entered to the 'tinkle-tinkle' of a little bell, we found the meat counter to be impressively stocked and prices quite reasonable. Everything was quiet. Too quiet. To our surprise, the clock suddenly struck high noon! Twelve bells!! For the jerky, the guy at the BBQ joint said 'you gotta talk to Steve personally'. So we asked the young man at the counter for Steve, the helper said "SShhhh!!" and we were quietly shuffled right back out the front door. He whispered that 'Steve' works in the back and he STFD. And locked it. WTH?? Really??!! So knowing we are desperate for a dried meat fix, we went to try the back door. We knocked three times and the door opened - but cracked only slightly. A pale man in a ball cap held out his hand, but said nothing. I fumbled for $10, handed it to the man and he quickly gave me the 'product' in a brown paper sack. The door slammed shut...locked tight. As the hair stood up on the back of my neck, I dared not open the bag - we just looked at each other, ran to the car, got in and hauled azz. Once out of town, the bag was opened....dried, peppery, chewy/crunchy....yep....THIS was the real deal. Just remember to knock three times.

The meat: it marinated beautifully overnight in a simple lime-based marinade. The people we cooked for are very food-savvy and said the meat was wonderful. The business: these guys always work with me. They are respectable and have everything when i need it. They had everything all ready to go and exactly as we had talked about when I picked up that bulk fajita order. Hard working ranchers and wonderful people. The quality: this is grass-fed, humanely raised animals. You're going to get more quality and nutritious products from this company. It's worth is, hands down. The bones I get to make my broth makes an amazingly tasty broth that everyone wants :) Keep this family's business alive. We need more of this!

In the ~3 miles from Farmer's Market to home, it lost .82 lbs. It weighed in at 2.15 lbs. While scales may vary, 8/10 of a lb is more than a calibration variance. All other vendors' marked weights have been consistent. While I will smoke this brisket tomorrow and update the review, it will have to be the greatest brisket ever. If it is the greatest brisket ever, I will ask for a refund and continue to do business, but will bring a scale with me. -------------------------------- 21AUG16, I have a theory why they overcharge. I don't expect they get repeat business. The "quality" of the brisket was about equal to an ungraded brisket like at a WalMart Neighborhood Market. I made that mistake once when in a pinch for any brisket. Now I've made a similar mistake with Blt Farms. They tie with WM Market as worst briskets I've had in several decades. A replacement is out of the question, as I am not wasting a day, rub, and mop sauce on this inferior beef. A refund would be nice, but it helps burn the ripoff in memory better. Overcharging and bad quality. 2 strikes in a row. There is no third. Caveat Emptor!
