The passion fruit was a thicker consistency of syrup, which threw it off a bit, and the flavor wasn't quite right. The berry sangria was missing something. It wasn't quite wine, not quite a fruit juice, and the fruit was all at the bottom, making it hard to drink. Not what we expected with the flavor profile. The quesabirria was flavorful with the beef and very tender. They definitely stuffed a lot of meat in the tacos, which will fill you up. Didn't like the cheese. It didn't pair well with the beef, and it was not enough in comparison. Overall, good tacos and would order again though. The service was fine. She was around enough for us to order more drinks and offered me a box at an appropriate time. The music wasn't too loud, barely heard over the crowd that started forming as we sat. I have a certain fondness for Pancho's Green Burrito, and when I ordered that dish for lunch today there was a pool of delicious green liquid literally spilling from both sides of my plate! A bit messy for the table, yes, but far better than the scant offerings of their competitor. Pancho has long been one of my most consistent dining experiences in this city, which is why it's often the target of my attention for lunch. They get patrons seated quickly and orders filled quickly. The food is always good and there's plenty of it to enjoy. The service staff does a great job of attending to the wants and needs of their diners. It's easy to see why the place is popular -- and thus why a parking spot can be tough to find around lunch time.

I started with the Huarache - basically a thick flatbread loaded with beans, Al Pastor (my meat choice), avocado, cheese, lettuce, tomato, and sour cream. Served with both a verde and a roja salaThis was an excellent item, as good as any I've had in the area. I saved most to be shared and finished later, not an easy decision. The Carnitas was another excellent item. The pork chunks here are as large as any I'd run across, but they are tender with some outside crust because they are slow simmered in lard - remember when lard was bad for us? The carnitas come with rice, beans, a bit of white onion, and a simple lettuce and tomato salad, and tortillas. This was a great meal - the carnitas were tender, I put some of the pork chunks in tortillas, added some onion, a squeeze of lime and rotated the salsa. On most Mexican salads, simple or otherwise, I squeeze a good amount of lime juice and a healthy amount of salt - this type of "dressing" goes well with most entrees. The "chili pork" are pastor, and while you can find better in the area, Julio's version is still fairly flavorful. You also can't go wrong with the "sausage," which are chorizo. Dropping in recently, I didn't see many changes to the interior of the restaurant from its previous incarnation. The menu seemed a bit different, at least in design and layout, and I noticed at least a few options I didn't recall from the Mi Pueblo days. I picked once of those, pork in salsa verde. In the meantime I sipped on a simple margarita and ate a few chips. My time here was during dinner hours, and I was really surprised to see how few patrons were present. The waiter said that wasn't unusual for an evening early in the week, and that business was substantially heavier in the later half of the week. Throughout my time in the eatery, I'm certain there were more employees on site than there were diners. The kitchen was able to process my order very quickly, likely a result of the low patronage, and so I didn't get to eat many of those chips before my plate showed up. The chunks of pork were tender enough to pull apart with my fork, and the green sauce surrounding them had a pleasant flavor and the right amount of potency for me. I hardly had enough of the salsa to accompany the meat though; a less stingy portion would have been appreciated. Rice and beans were about what you'd find at any Mexican restaurant in our area. The guac salad seemed very light on guacamole though, and the lettuce shreds were pale white. The menu has mentioned there would be avocado slices on the plate too, but no avocado was provided aside from that found within the tiny blob of guacamole. I remember hearing that the transition to Ma'Luz was intended to represent an upscaling, a somewhat fancier option. My experience didn't really feel that way. The food wasn't bad, especially the meat and salsa verde, but this didn't come across as any more special or satisfying an experience as in visits past. And maybe that's why the traffic they're getting isn't all that hectic or busy.
