The way the restaurant prepares the soup is they put the soup and cheese in the bowl and then drown it in some type of liquor like a cognac or brandy. Then they light the top of the soup on fire, which is supposed to present the melted cheese while at the same time burning off the alcohol. The soup I got tasted so much of alcohol. I could not eat it. And it was a little bit skimpy on the cheese.
